Ladies, please share your favorite vegetarian or vegan recipes.

One of my faves happen to be on YouTube.

MahaMana (Terriyaki Tofu Sushi)-- You don't need to make a sushi roll. If you wish, plain rice and some mixed veggies with the terriyaki tofu is also good enough. Simple and yummy too.  Enjoy!

Vegan Rice Pudding Recipe
INGREDIENTS:
  • 1/2 cup white rice
  • 4 cups soy milk
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • dash of nutmeg
  • 1/4 cup sugar
  • 1/2 cup raisins
PREPARATION:
Preheat the oven to 275 degrees.

Mix all ingredients in a bowl and place in a 1 1/2 quart lightly oiled ovenproof dish. Bake, covered, for 3 hours, or until the pudding sets.

Homemade Seitan

Makes about 2 pounds, about 10 servings

Store-bought seitan can be excellent, or it can be disconcertingly tough. Either way, though, it’s expensive. Making seitan completely from scratch (which involves making a whole wheat dough and then rinsing and rinsing to get rid of the starch) is time-consuming and messy. Using pure gluten flour provides a clever shortcut to a great homemade version that is not difficult to make. This may be idiosyncratic, but it works well and with practice produces seitan that is chewy but not overly so. Whenever I make this, I freeze half and am always happy to come across and use it 2 to 3 weeks later.

  • 2 tablespoons reduced-sodium soy sauce
  • 2 1/4 cups gluten flour (vital wheat gluten)
  • 1/2 teaspoon baking powder

Broth:

  • 2 vegetable bouillon cubes
  • 2 tablespoons reduced sodium soy sauce
  • 3 to 4 slices fresh ginger

Combine the soy sauce with 1 cup of water in a small mixing bowl. Place the gluten flour and paking powder in a medium mixing bowl and stir together. Gradually add the liquid to form a stiff dough, stirring with a spoon at first, and then working together with your hands.

Turn out onto a floured board and knead 30 times, then return the dough to the bowl, cover with a clean tea towel, and let it rest for 15 minutes.

Meanwhile, bring 10 cups water to a simmer in a large soup pot. Add the bouillon cubes and ginger.

Once the water is close to a simmer, divide the dough into two pieces and pull into long, narrow loaves the shape of miniature French breads.

With a sharp, serrated knife, cut each section of dough crosswise into approximately 1/2-inch sections. When the water comes to a simmer, insert each slice. Simmer gently and steadily for 30 minutes. Drain (if desired, save the tasty stock to use for soup or other purpose) and let cool. Use in recipes calling for seitan.

Note,You can also find on line many homemade seitan recipies made from wholewheat flour,I have tried 2 and the seitan made with the wholewheat flour has a cooked mushroom like texture,my kids thought it was actualy eggplant when I sliced it thin,topped with tomatoes and soy cheese than baked it for about 10 minutes in the toaster oven.

Golden Tofu Strips

  • 5.3 ounces of firm tofu (1/3 of a 16-ounce block)
  • 1/4 teaspoon salt
  • 1/4 teaspoon turmeric
  • 1/2 tablespoon canola oil

Cut tofu into strips 1/4 inch wide and 2 inches long. Heat 1/2 tablespoon canola oil. Add tofu strips, 1/4 teaspoon salt and 1/4 teaspoon turmeric. Stir to thoroughly coat all sides of tofu. Cook tofu strips about 5 minutes or until golden brown. Serve on top of a salad, stir-fry, or stuffed in a pita with shredded lettuce. (Makes 1-2 servings)

Recipe by: Susan Voisin(adapted it to get rid of oil.)
Yield: 4 servings


2 cups chopped onions
water for browning, if needed
3 cups chopped cabbage
1 fresh chile, minced (seeded for a milder "hot"), or 1/4 teaspoon cayenne
1 tablespoon grated fresh ginger root
2 cups water
3 cups diced sweet potatoes, cut into 1/2inch cubes (about 1 medium sweet potato)
Salt to taste
2 cups undrained chopped fresh or canned tomatoes
2 cups fresh or frozen sliced okra
3 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
Chopped peanuts
Sprigs of cilantro (optional)

In a nonstick soup pot, brown the onions on medium heat for 4 or 5 minutes (use a little water, if necessary to prevent sticking). Add the cabbage and the chile or cayenne and continue to sauté, stirring often, until the onions are translucent, about 8 minutes.  Add the grated ginger and the water, cover the pot, and bring to a boil. Stir in the sweet potatoes, sprinkle with salt, and simmer for 5 or 6 minutes, until the potatoes are barely tender. Add the tomatoes, okra, and lime juice. Simmer until all of the vegetables are tender, about 15 minutes. Stir in the cilantro and add more salt to taste.

Sprinkle the stew with chopped peanuts. Top with a few sprigs of cilantro, if you like.


* O.k folks,the above recipe is Susan's version that she adapted from the origional recipe found at food network,when I make this,I double the recipe and add any veggies I have on hand, could be green bananas, batata ( taste like sweet potatoe) yucca...etc, whatever I have,plus I add a lot of garlic and more cilantro.So use above as a guideline and adapt as you like. ~Michele( I have never tried adding the peanuts)

* I have made muffins using this recipe but I could not find a sugar specificaly labled "Vegan" I use sugar in the raw and the muffins came out fine.

Fat Free Banana Bread ,Submitted by Sheila

Ingredients:

5 ripe bananas 1 cup vegan sugar 1 teaspoon vanilla 2 cups whole wheat flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/4 cup water Directions: In a large bowl mash bananas with sugar and vanilla until combined and creamy. Then mix in the water. In a smaller bowl, sift together the flour, soda, powder and cinnamon. Add the dry to wet and stir until just mixed. You don't want to over mix or the bread will be dry. Pour batter into sprayed loaf pan and bake in preheated 350°F oven for one hour. Your house will smell so good you will be tempted to take it out a few minutes earlier but don't or it won't be done on the inside. Comments: This is fat free unless you put a pat of vegan margarine on it. You can add other add-ins like chocolate chips, carob chips or nuts and fruits. This is a super yummy loaf that the kids love. It makes great muffins too
