Chewy Coffee Brownies


1 1/2 cups firmly packed dark brown sugar
1/2 cup reduced-calorie stick margarine
2 1/2 tablespoons instant coffee granules
1 tablespoon vanilla extract
2 egg whites
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup semisweet chocolate morsels
Vegetable cooking spray

Combine sugar, margarine, and coffee granules
in a small saucepan. Place over low heat;
cook for 4 minutes or until margarine melts
and the mixture is smooth, stirring frequently.
Combine sugar mixture, vanilla, egg whites,
and egg; beat at low speed of a mixer until smooth.

Combine flour, baking powder, and salt;
gradually add to creamed mixture, beating well.
Stir in chocolate morsels. Spread batter into a
13 x 9-inch baking pan coated with cooking spray.

Bake at 350° for 18 minutes; let cool in pan.

Yield: 2 dozen

The Turks brought coffee to Austria when their army surrounded Vienna in 1683, laying siege to the city.

In 1785, the coffee revolt broke out in Prussia because coffee consumption was restricted to the nobility, the clergy and high officials.

Before coffee was introduced as a stimulant, it had been a social custom in Aden to chew the fresh leaves of "qat", as it had a mild narcotic effect.

The three biggest coffee drinkers in the world are the Americans, the French and the Germans. They consume some 65% of the total world's consumption of coffee.

The coffee bean is called "bunnu" in Arabic.

The word 'cappuccino' is the result of several derivations, the original of which began in 16th century. The Capuchin order of friars, established after 1525, played an important role in bringing Catholicism back to Reformation Europe. Its Italian name came from the long, pointed cowl, or cappuccino, derived from cappuccio, "hood," that was worn as part of the order's habit. The French version of cappuccino was capuchin, from which came English Capuchin. In Italian cappuccino went on to describe espresso coffee mixed or topped with steamed milk or cream, so called because the color of the coffee resembled the color of the habit of a Capuchin friar. The first use of cappuccino in English is recorded in 1948 in a work about San Francisco. There is also the story line that says that the term comes from the fact that the coffee is dark, like the monk's robe, and the cap is likened to the color of the monk's head.

Coffee and Fennel-Rubbed Strip Steaks With Orange-Thyme Butter

Makes 6 servings

Avoid very dark-roasted beans, which can make this spice rub taste too bitter.

Coffee-and-fennel spice rub:
2 tablespoons whole coffee beans
2 teaspoons whole fennel seeds
2 teaspoons whole black peppercorns
2 teaspoons firmly packed brown sugar
1 tablespoon kosher salt
2 teaspoons paprika
1/8 teaspoon cayenne pepper (optional)

Orange-thyme butter:
6 tablespoons unsalted butter, softened
2 teaspoons minced fresh thyme
1 tablespoon minced fresh Italian (flat-leaf) parsley
1 tablespoon minced shallot
1 heaping teaspoon grated orange zest
Salt and freshly ground black pepper

4 strip steaks, 1 to 11/4 inches thick (about 3 pounds total), trimmed of excess fat and patted dry
2 teaspoons vegetable oil

To make rub:
In a spice grinder combine coffee beans, fennel seeds and peppercorns; process until finely ground. Transfer to a small bowl and blend well with brown sugar, salt, paprika and cayenne, if using.

To make butter:
In a small bowl, use a fork to blend butter, thyme, parsley, shallot and zest; season to taste with salt and pepper and set aside.

To make steaks: Adjust oven rack to middle position and heat oven to 350 degrees. Thoroughly coat each side of steaks with spice rub and press so mixture adheres. Add oil to large, oven-safe skillet and heat over medium-high heat until oil is smoking. Place steaks in pan and arrange so they're not touching, and cook until well browned but not burnt, 21/2 to 3 minutes. Flip and cook second side until browned, about 2 minutes. Transfer skillet to oven and cook 4 to 6 minutes for medium rare, 7 to 9 minutes for medium.

Transfer steaks to serving platter, spread each with some orange-thyme butter, and allow to rest for at least 5 minutes. Cut into 1/4-inch slices, arrange on warm plates and top with a little more butter.

The Story Of Coffee(part1)

The story of how coffee growing and drinking spread around the world is one of the greatest and most romantic in history. It starts in the Horn of Africa, in Ethiopia, where the coffee tree probably originated in the province of Kaffa. There are various fanciful but unlikely stories surrounding the discovery of the properties of roasted coffee beans. One story has it that an Ethiopian goatherd was amazed at the lively behaviour of his goats after chewing red coffee berries. What we know with more certainty is that the succulent outer cherry flesh was eaten by slaves taken from present day Sudan into Yemen and Arabia, through the great port of its day, Mocha, now synonymous with coffee. Coffee was certainly being cultivated in Yemen by the 15th century and probably much earlier than that.

Mocha was also the main port for the one sea route to Mecca, and was the busiest place in the world at the time. But the Arabs had a strict policy not to export any fertile beans, so that coffee could not be cultivated anywhere else. The coffee bean is the seed of the coffee tree, but when stripped of its outer layers it becomes infertile. The race to make off with some live coffee trees or beans was eventually won by the Dutch in 1616, who brought some back to Holland where they were grown in greenhouses.

Initially, the authorities in Yemen actively encouraged coffee drinking as it was considered preferable to the extreme side effects of Kat, a shrub whose buds and leaves were chewed as a stimulant. The first coffeehouses were opened in Mecca and were called 'kaveh kanes'. They quickly spread throughout the Arab world and became successful places where chess was played, gossip was exchanged, and singing, dancing and music were enjoyed. They were luxuriously decorated and each had an individual character. Nothing quite like the coffeehouse had existed before: a place where society and business could be conducted in comfortable surroundings and where anyone could go, for the price of coffee.

The Arabian coffeehouses soon became centres of political activity and were suppressed. Coffee and coffeehouses were subsequently banned several times over the next few decades, but they kept reappearing. Eventually a solution was found when coffeehouses and coffee were taxed.

COFFEE COMES TO ASIA

The Dutch were also growing coffee at Malabar in India, and in 1699 took some to Batavia in Java, in what is now Indonesia. Within a few years the Dutch colonies had become the main suppliers of coffee to Europe. Today Indonesia is the fourth largest exporter of coffee in the world.

COFFEE COMES TO EUROPE

Venetian traders first brought coffee to Europe in 1615. This was a period when the two other great hot beverages also appeared in Europe. Hot chocolate was the first, brought by the Spanish from the Americas to Spain in 1528; and tea, which was first sold in Europe in 1610.

At first coffee was mainly sold by lemonade vendors and was believed to have medicinal qualities. The first European coffeehouse opened in Venice in 1683, with the most famous, Caffe Florian in Piazza San Marco, opening in 1720. It is still open for business today.

The largest insurance market in the world, Lloyd's of London, began life as a coffeehouse. It was started in 1688 by Edward Lloyd, who prepared lists of the ships that his customers had insured.

COFFEE COMES TO THE AMERICAS

The first reference to coffee being drunk in North America is from 1668 and, soon after, coffee houses were established in New York, Philadelphia, Boston and other towns. The Boston Tea Party Of 1773 was planned in a coffee house, the Green Dragon. Both the New York Stock Exchange and the Bank of New York started in coffeehouses, in what is today the financial district known as Wall Street.

It was in the 1720s that coffee first came to be cultivated in the Americas, through what is perhaps the most fascinating and romantic story in the history of coffee.
Gabriel Mathieu de Clieu was a French naval officer serving in Martinique who in 1720, went to Paris on leave. With assistance and no little personal charm he acquired a coffee tree which he took with him on the ship back. The plant was kept in a glass case on deck to keep it warm and prevent damage from salt water. The journey was eventful, or at least Mr. Mathieu de Clieu's journal of the voyage was. Pirates from Tunis threatened the ship, there was a violent storm and the plant had to be tied down. Our hero faced an enemy on board who was jealous and tried to sabotage the plant. There was a violent struggle in which a branch was torn off, but the plant survived this horror.

Then the ship was becalmed and drinking water was rationed. De Clieu had his priorities right and gave most of his allowance of precious water to the coffee plant. It survived, as did he.

Finally, the ship arrived in Martinique and the coffee tree was re-planted at Preebear, where it was surrounded by a thorn hedge and watched over by slaves. It grew, and multiplied, and by 1726 the first harvest was ready. It is recorded that by 1777, there were between 18 and 19 million coffee trees on Martinique, and the model for a new cash crop that could be grown in the New World was in place.

But it was the Dutch who first started the spread of the coffee plant in Central and South America, where today it reigns supreme as the main continental cash crop. Coffee first arrived in the Dutch colony of Surinam in 1718, to be followed by plantations in French Guyana and the first of many in Brazil at Para. In 1730 the British introduced coffee to Jamaica, where today the most famous and expensive coffee in the world is grown in the Blue Mountains. By 1825, South and Central America were on track towards their coffee destiny. That date is also important as it was when coffee was first planted in Hawaii which produces the only US coffee, and one of the finest.

COFFEE TODAY

For North Americans, the world's largest consumers, Seattle is the new spiritual home of coffee. The wettest major city in the USA gave birth in the 1970s to a café or 'Latte' culture which swept the USA and has dramatically improved the general quality of the coffee Americans drink. Today, any public place in the USA will have one or more coffee carts, serving a variety of coffees, drinks and snacks.

This new found 'coffee culture' has started to spread to the rest of the world. To those countries with great coffee traditions of their own, such as Italy, Germany, and Scandinavia, added new converts to the pleasures of good coffee. Today it is possible to find good coffee in every major city of the world, from London to Sydney to Tokyo; tomorrow the world will drink more and more importantly, better coffee.


COFFEE IS A GLOBAL COMMODITY

The importance of coffee in the world economy cannot be overstated. It is one of the most valuable primary products in world trade, in many years second in value only to oil as a source of foreign exchange to developing countries. Its cultivation, processing, trading, transportation and marketing provide employment for millions of people worldwide. Coffee is crucial to the economies and politics of many developing countries; for many of the world's Least Developed Countries, exports of coffee account for a substantial part of their foreign exchange earnings in some cases over 80%. Coffee is a traded commodity on major futures and commodity exchanges, most importantly in London and New York.

Made the coffee raisin bars again!Omg so dang good!Yummy!I suggest you all try it and is easy to make and done in 20 minutes bake time....Its best warmed up!a few seconds in microwave!And a nice cup of coffee with it!Also i found its best to add a lil extra flour!

good morning and having a cuppa java and thinking of you all...Hi Mona...I can't wait to see how that pie turned out, I bet the zucchini was delicious in it...I need to start baking again...I've been cooking out alot lately, having veggies on spits, like zucchini, yellow squash, green bell pepper, onions, big mushrooms and fresh tomoatoes (have to be careful turning them)...I love veggies, sorry for getting off the Java topic...Hi Che, I'm sorry I can't see your picture too...I think Care2 has a problem with their pages loading lately...

I forgot to mention...

I am making the coffee raisin bars today....The recipe is below!

Made them once before they are delicious.......But this recipe i posted is a new one then the other i had made!

COFFEE BARS 

1 cup golden raisins
2/3 cup strong coffee (leftover from the pot)
1/2 tsp cinnamon
2/3 cup butter
1 cup sugar
2 eggs
1 1/2 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Glaze:

1 1/2 cups icing sugar
coffee

Preheat oven to 350F degrees.

Combine raisin, coffee and cinnamon and let stand. Cream shortening and sugar, adding eggs one at a time, and beating well.

Mix and sift flour, baking powder, soda and salt. Add raisin mixture.

Spread batter in greased 9x13 pan.

Bake at 350F for 20-25 minute.

While still warm, spread with coffee glaze made by adding enough coffee to 1 1/2 cups icing (confectioner's) sugar to achieve a thin spreading consistency.

Cut when cool.

Sounds delicious Jean and i think i gained a few pounds just drooling as i look at the pic of this smores cake........YUMMY!I will try this one as well.....Jean i have a question for you in the summer recipe thread....

Here is an easy way to make iced coffee!

ICED COFFEE!

You will need coffee already brewed

Kamora a non expensive coffee liquore or any coffeee liquore you like!

Flavored cremer i prefer creme brulee flavor myself....

And Hershey chocolate syrup

and cinnamon

coolwhip preferably the can whip

and ice

in a blender fill with ice and brewed coffee 3/4 quarters they way filled.

Then the flavored cremer more cremer the better though!And to a full blender i add about 1 cup of kamora coffee liquore!then add the hersheys syrup about 1/4 cup!

Blend it till ice is crushed and the mix looks slushy!

top with coolwhip and sprinkle cinnamon on top of cool whip!

Its so delicious and so many ways to change the taste with the flavored cremers and the cinnamon is optional!

You may also use vanilla ice cream instead of coowhip and chocolatechips shved for the topping or use your imagination and taste buds!

S'mores Kona Coffee & Fudge Cake
 
 
 
Ingredients:
  • 16 whole graham crackers (about 8 ounces)
  • 1 cup whole almonds, toasted
  • 3 tablespoons sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/2 quarts coffee ice cream, softened until spreadable
  • Fudge Sauce
  •  1-7 ounce jar marshmallow creme
  • 2 cups miniature marshmallows

Preheat oven to 350°F. Finely grind graham crackers, toasted almonds and 3 moisttablespoons sugar in processor. Add 1/2 cup melted butter; process mixture until  crumbs form. Press graham cracker mixture onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake crust until edges are golden, about 12 minutes. Cool graham cracker crust completely.

Spread 2 cups softened ice cream in crust. Spoon 3/4 cup cooled Fudge Sauce over. Freeze until sauce is just set, about 10 minutes. Refrigerate or freeze remaining ice cream as necessary to prevent ice cream from melting. Repeat layering with 2 cups ice cream, then 3/4 cup sauce. For extra coffee flavor, add a thin layer of Pu'u Nani Coffee grounds between each layer.Freeze until sauce is just set. Spread remaining 2 cups ice cream over. Cover and freeze cake overnight. Refrigerate remaining Fudge Sauce.

Preheat broiler. Warm remaining Fudge Sauce in small saucepan over low heat. Remove from heat. Place cake in pan on baking sheet. Spread marshmallow creme over top of cake. Sprinkle miniature marshmallows over in single layer. Broil just until marshmallows are deep brown, watching closely to avoid burning, about 1 minute. Run knife between pan sides and cake to loosen. Remove pan sides. Cut cake into wedges. Serve cake immediately with warm Fudge Sauce and enjoy!

I have tried this one and it is delicious ...I think I might do it again and also make an ambroshia salad too...

I am drinking a cup of coffee and its coffee from germany that my friend monika brought back from germany where she is from and visits her family now every summer there now that she permanently lives here!Its very rich in taste a bit bitter then i like but its very strong one cup and ya want to do jumping jacks...Lmao!

I know this is probably the wrong place to put this, since its a recipe, but it does sound good for having a dessert with Coffee

Coffee Float (cold) 4 servings 

     
    2 1/2 cups strong coffee 
    2 teaspoons sugar 
    2/3 cup cream 
    4 scoops of coffee flavored ice cream 
    1 large bottle of Coke 
     
  1. Sweeten coffee with sugar, and chill
  2. Mix coffee and cream
  3. Fill 4 glasses half full
  4. Add one scoop of ice cream to each glass
  5. Top with coke

So true i hear ya gf!Me 2 recently i tried to back off the coffee and well a few smells of it at a friends house got me drinking it again myself!I love it and yes ya do get headaches once ya go off of it!I got headaches also and felt like something was simply missing and it was the java and its not just the caffiene in it that helps us start our day but its the smell and all the different flavors and aromas and like you lets be happy and continue drinking our java!Hell its become my companion in the early hours of the day!Nothing like snugglin up to a nice hot cup of joe and lickin the lips and saying MMMMmmmmmmmmmmmmmm!LMAO!

I can't get enough of this. Tried to quit drinking coffee once, cut back to 1/2 caffiene, then nilch....lasted for 1 month, had the worst headache and my body wasn't Right ....so, I guess I'll continue to drink my one of many Passions, and not worry about the Side effects ....anyway, I want to die happy when the good Lord calls, and Coffee makes me HAPPY !!!
