CHEESE FROM THE DESERT... February 23, 2007 12:36 AM

It has been said that cheese was discovered in the desert.  It is believed that it was a gift from Allah.
In nomadic communities milk is often kept in bags made from goat stomach's.  Given the heat from the desert and the motion of the traveling the natural rennet was in the goat's stomachs, curds were formed and this is the first cheese.

HOMEADE YOGURT (4 Quarts)
     
This is an ancient way of preserving milk. From this came cheese and other cooking sauces. These were common to desert life. Yogurt is
one of the easiest dishes to make contrary to what you may think.
You do not need special equipment and it is far superior and less
expensive than the products on the shelves of supermarkets.

The yogurt I make is delicious! Blend 6 Cups of water, 1 1/2 Cups
of non-instant powdered milk, a large can of evaporated milk, and
3 Tablespoons of commercial yogurt (or the last batch you made).
Be sure that the yogurt you use has live cultures. I put this mixture in jars and set it in a large pan of warm water.  I preheat my oven to 250 degrees and sit the pan of yogurt jars in the oven. I turn off the oven and shut the oven door, by morning I have wonderful yogurt!
In the summer time if you live in a hot climate put it in the sun.
You can tell by the consistency when it is done.

Homeade yougurt is much sweeter than commercial yogurt and smoother.
I use it in cooking and it is good sweetened with honey also.

If you are nervous about making it this way there are many yogurt
makers and they are not expensive.

VEGETABLE STUFFED JUMBO SHELLS (BEATS THE MEAT)YUMMY

2TABLESPOON OLIVE OIL, 2 SMALL SHALLOTS DICED, 1 10 OZ FROZ SPINACH SQUEEZE DRY, 2CUP SHREDDED CARROTS, 1 ZUCCHINI 1 YELLOW SQUASH JULIENNED 1 1/2 CUPS EACH, 4GARLIC CLOVES MINCED, 1 8OZ CONTAINER PART SKIM RICOTTA CHEESE, 1 1/4 CUP SHREDDED PARM CHEESE 1/4 TEASPOON OF SEA SALT, 1/4 TEASPOON OF PEPPER, 1LB OF JUMBO PASTA SHELLS COOKED 1 JAR OF ORGANIC SPAGHETTI SAUCE 1/4 CUP FRESH BASIL CHOPPED.PREHEAT OVEN AT 375
HEAT OIL IN A HEAVY LARGE SKILLET OVER MED HEAT. SAUTE SHALLOTS FOR 5 MIN, ADD SPINACH, CARROTS ZUCHINI, SQUASH AND GARLIC COOK FOR 10 MIN OR UNTIL TENDER. LET COOL
COMBINE RICOTTA AND 1/4 PARM, SALT AND PEPPER IN MEDIUM BOWL STIR IN VEGGIES FILL SHELL PLACE IN BAKING DISH THEN POUR SAUCE OVER SHELLS AND THE REMAIN PARM COVER WITH FOIL BAKE FOR 30 MIN In PREHEATED OVEN THEN AFTER DONE SPRINKLE WITH BASIL OVER HOT BUBBLING SHELLS. ENJOY  [ send green star]
