I live in a state where not only do a lot of people love meat, love hunting, and hate vegetarians, but they also love to show it off. Lots of front page articles in the local news about the hunters latest kills, images of butchered animals. Lots of glorifcation for killing animals. When I lived back east, I remember there was a lot of hunting too, but I don't recall all the publicity I see here. Maybe I'm just more aware now. Does anyone else see this where they live?
1 can black beans1 can diced tomatoes (plain or w/ chiles)8oz frozen corn1 avocadolime juicecilantro10-16 your choice shells or wrapsDrain and rinse black beansDrain and lightly rinse tomatoesCombine beans, tomatoes, and frozen corn in a large bowlSlice or dice avocado to preferred size, add to bowlAdd lime juice and cilantro to tasteStir to coat and serve cold on shells/wrapsDepending on how big your shells/wraps are this should make about 10 to 16 servings.
Gazpacho (non-traditional)1 46oz can vegetable juice1 can diced tomatoes (or 1-1/2 cups diced fresh tomatoes w/ juice)1 cucumber1 red, yellow, or green pepper1 sm/med onion3-5 cloves of garlic1 T black pepper3 T Lemon juice3 shakes hot sauce (or more if you like it spicy)~Dice or slice cucumber, pepper, and onion to preferred size.~Combine first 5 ingredients in large pot/kettle.~Add crushed garlic, black pepper, lemon juice, and hot sauce. *Caution: add these ingredients "to taste" only if you plan on eating this right away.~The most important step: Place in fridge for at least 8 hours! Notes: I prefer to use a yellow pepper and a red onion to add some nice color to this cold soup. I have found myself in the bad habit of not measuring anything when I whip something up in the kitchen. That said, you might not want to try this if you require exact measurements.TomatoesGreen pepperCheese, shreddedGuacamole or salsaTaco shellsFirm or extra firm tofuOnionGarlicCuminWhite pepperCayenne pepperCilantroSalt (optional)~Chop the tomatoes and green pepper, set aside~Shred the cheese if it's not shredded already, set aside~Chop the onion and garlic, and crumble the tofu~Heat oil in a large skillet over medium heat~Put onion, garlic, and tofu in skillet, and add seasonings to taste~Fry until cooked through or golden brown (whichever your prefer)~Heat taco shells as desired~Spoon tofu mixture into taco shell, put cheese on top so it melts~Put desired amount of green pepper, tomato, and guacamole or salsa into shellNOTE: I made hard shell tacos (which I hate, but I bought the wrong shells) so I used the guacamole to "glue" everything into the shell.
I made tofu parmesan last night. My first time cooking with tofu and it came out WONDERFUL! Now I'm more comfortable with cooking it. I can't wait to try out new recipes. *drool*

McDonald's vegetarian optition's for a vegetarian is 3 items.Fish fingers, fillet o-fish, spicey veggie there should be a more wider variety of choices.I asked McDonald's for more on the menu that includes meat free foodthey said yes only if there is a big customer demand.That mean the more people sign this there will be more vegetarian food.Please sign this even if your not a vegetarian because the more people sign the less animals die.
A week ago I declared my desire to give up the consumption of living things and become a vegetarian. I know that it's something that isn't as easy to actually follow through with as it is to talk about.... and used several tips from the PETA website to help me get through week 1... I chose not to go "cold turkey"... mostly because I don't want to jump into a fad... and rather make a full circle lifestyle change. The majority of my days were vegetarian days.... and a couple I had a small amount of meat. But I plan on completely fading out of that trend in the next couple weeks. I just thought all at one time, was #1 wasteful to what I already have in my fridge, and #2.... I had already done all of my meal planning for my husband and kids and hope that my next shopping trip will be full of fun new recipes that I can eat freely and that my husband, who is NOT ever going to give up meat (he says) can eat the "way" he wants. So here's to this next week.... my new recipes... healthier choices and to hoping my husband doesn't give me too much crap!
