The distinctive flavor of Lerenes stands out when mixed with the ingredients in this recipe and then fried into crisp fritters for a satisfying appetizer.
1/2 pound lerenes, scrubbed, dried, grated
1 small onion, peeled and minced
2 tablespoons cilantro, minced
1/2 red bell pepper, minced
2 tablespoons flour
1/2 teaspoon adobo or salt
1 teaspoon sofrito
1/4 teaspoon pique (puerto rican hot sauce - optional)
2 eggs, lightly beaten
5 tablespoons frying oil of your preference
Mix together lerenes, onion, pepper, cilantro, flour, adobo, pique, and sofrito.
Stir in eggs and mix well.
Heat oil until surface ripples in large skillet over medium-high heat.
Scoop batter by tablespoons into skillet and flatten with back of spoon.
Fry until batter is crisp and brown, about 2 minutes on each side.
Drain on paper towels while repeating with remaining batter.
