The distinctive flavor of Lerenes stands out when mixed with the ingredients in this recipe and then fried into crisp fritters for a satisfying appetizer.
INGREDIENTS:
1/2 pound lerenes, scrubbed, dried, grated

1 small onion, peeled and minced
 
2 tablespoons cilantro, minced

1/2 red bell pepper, minced
2 tablespoons flour

1/2 teaspoon adobo or salt

1 teaspoon sofrito

1/4 teaspoon pique (puerto rican hot sauce - optional)

2 eggs, lightly beaten

5 tablespoons frying oil of your preference
DIRECTIONS:
  • Mix together lerenes, onion, pepper, cilantro, flour, adobo, pique, and sofrito. 
  • Stir in eggs and mix well.
  • Heat oil until surface ripples in large skillet over medium-high heat.
  • Scoop batter by tablespoons into skillet and flatten with back of spoon.
  • Fry until batter is crisp and brown, about 2 minutes on each side.
  • Drain on paper towels while repeating with remaining batter.
  • Serve hot.
