1 1/2 cups whole-wheat flour

1/2 cup oat bran

1/2 cup ground flaxseed

1 tsp. baking powder

1 tsp. pumpkin pie spice

1/4 to 1/2 tsp. salt (optional)

2 large eggs or 1/2 cup egg substitute

1 cup unsweetened applesauce

1 cup honey or brown rice syrup

1 tbsp. real maple syrup

1 tbsp. Grand Mariner Liqueur (optional)

1 tsp. vanilla

1/2 cup regular raisins

1/2 cup golden raisins

1/2 cup chopped dates

1/2 cup dried chopped pineapple

1/2 cup dried currants

1/2 cup dried cranberries

1/2 cup dried blueberries

1/2 cup dried cherries

1/2 cup shelled unsalted sunflower seeds

1/2 cup shelled sliced almonds

1/2 cup shelled chopped walnuts

Preheat oven to 325 degrees F.

In a large bowl, mix together flour, oat bran, ground flaxseed, baking powder, pumpkin pie spice, and salt - then set aside.

In a different large bowl, mix together eggs, unsweetened applesauce, honey or brown rice syrup, maple syrup, liqueur, and vanilla.

Gradually stir in the dry ingredients from the first bowl into the wet ingredients in the second bowl - and mix well.

Stir in the dried fruits and nuts.

Pour mixture into greased/floured baking pans – 2 medium loaf pans or 2 round 8-inch cake pans.

Bake 1 1/2 to 2 hours.

Cool on baking rack(s).
