Ingredients for 2 loaves:
2 ¼ to 2 ½ cups warm water or vegetable stock
2 packets rapid rise yeast
1/4 cup olive oil
1/4 cup sugar
1/2 tsp salt
1/4 tsp ground black pepper
1/4 cup ground flaxseeds
2 cups soy flour
4 cups whole-wheat flour
Variation 1: For Italian flair – add 2 tbsp. Italian seasoning, 2 tsp. onion powder, and 1 tsp. garlic powder to dry ingredients.
Variation 2: For Indian flair – add 2 tsp. curry powder, 1 tsp. garam masala, 2 tsp. onion powder, and 1 tsp. garlic powder to dry ingredients.
Variation 3: For Holiday flair – add 1 tbsp. Pumpkin Pie Spice and 3 tbsp. brown sugar to dry ingredients.
1. Preheat oven to 350 F.
2. Combine all dry ingredients (EXCEPT THE YEAST) together in a large bowl and set aside.
3. In another large bowl, dissolve the yeast into the warm water/stock; add the olive oil and the honey, and mix together.
4. Fold the dry mixture into the wet mixture, mixing together until well combined. Add extra flour, a tablespoon or two at a time, to get the dough to a point where it can be easily kneaded and shaped.
5. Knead dough for 10-15 minutes, until dough is smooth and elastic.
6. Return dough to bowl, cover, and let rise for 20-30 minutes, until dough is about doubled in size.
7. Shape dough (loaf, round, flat, twist, braid...), put into oiled pan(s) or cookie sheet(s), and let rise for another 15-20 minutes.
8. Bake in 350 F oven for 30-40 minutes.
9. Remove from oven and pan(s) or sheet(s), and let cool on baking rack(s).
