2 med sweet potatoes, cubed 3 small russet potatoes, cubed 2 heads broccoli, chunked 2 tbsp olive oil 2 tsp Italian seasoning
Place potatoes in a baking dish. Drizzle with olive oil & add Italian seasoning. Toss to coat. Bake in 375 degree oven 45 min. Add broccoli and bake another 20 to 30 minutes.
NOTE: LOTS of room for substitutions or additions in this recipe! Add red onions, bell peppers, zucchini, or whatever you like. You may have to adjust baking times depending on the ingredients used.
