Zutaten für 12 Stück: 100 g Butter, 1 Prise Salz 250 g Mehl, 6 Eier (Gr. M) 300 g Erdbeeren 1 EL Zitronensaft 400 g Magerquark 100 g Zucker 1 Päckchen Vanillin-Zucker 3 Päckchen Sahnefestiger 200 g Schlagsahne 100-125 g Himbeeren 100 g Heidelbeeren ca. 1 EL Puderzucker Backpapier Zubereitung: 1. 1/4 l Wasser, Butter in Stückchen und Salz aufkochen. Mehl auf einmal zufügen. Mit dem Kochlöffel rühren, bis sich der Teig als Kloß vom Topfboden löst und sich dort ein weißer Film bildet. Ca. 15 Minuten abkühlen lassen. 2. Ofen (E-Herd: 225 °C/Umluft: 200 °C/Gas: Stufe: 4) vorheizen. Eine kleine niedrige ofenfeste Form oder Tasse mit heißem Wasser füllen und auf den Boden des Backofens stellen. 3. Eier mit den Knethaken des Handrührgerätes nacheinander (!) gut unter die Brandmasse kneten. In einen Spritzbeutel mit großer Sterntülle füllen. Mit genügend Abstand je 6 Blüten (ca. 8 cm Ø) auf 2 mit Backpapier ausgelegte Backbleche spritzen. Nacheinander im vorgeheizten Backofen ca. 20 Minuten backen. 2-3 Minuten ruhen lassen, dann waagerecht halbieren. Blüten auskühlen lassen. 4. Erdbeeren waschen und putzen. Hälfte Erdbeeren würfeln und mit Zitronensaft pürieren. Quark, Zucker, Vanillin-Zucker und Sahnefestiger verrühren. Püree unterrühren. Ca. 30 Minuten kalt stellen. Sahne steif schlagen und unter die Quarkmasse heben. 5. Himbeeren verlesen. Heidelbeeren waschen und abtropfen lassen. Rest Erdbeeren klein schneiden, mit übrigen Beeren mischen. Die Quarkcreme in einen Spritzbeutel mit großer Sterntülle füllen. 3/4 Beeren auf die unteren Blüten verteilen. Creme darauf spritzen. Rest Beeren hineindrücken und die oberen Blüten darauf setzen. Mit Puderzucker bestäuben. kcal kJ Eiweiß Fett KH Broteinheiten 280 1170 11 g 16 g 22 g -
