Cobb Salad Vegan Style
On hot or cool Summer days. the Cobb Salad is a refreshing meal. It is easy to prepare and delightful to eat. The Cobb Salad was created by Bob Cobb owner of the Brown Derby restaurant in Hollywood. One night in 1937 Bob Cobb was hungry; the chef had left for the night. Mr Cobb opened the restaurant refrigerator and began pulling out cold food: Chicken breast. avocado, cherry tomatoes, watercress, olives. hard boiled eggs, chives, romaine salad and dressing. Voila, he arranged the food on a plate drizzled with dressing and shared the meal with a friend, Sid Grauman (Grauman's Chinese Theatre). The next day Grauman asked for a 'Cobb Salad.' It was so good that it was put on the menu.

Stir Fried Tofu
Boiled/Broiled/Stir Fried Yucca
OPT: Tofurky Deli Slices
OPT: Corn on the Cob/Broccoli Florets
Rice or Other vinegar
Few Teasp Oil
Drops of Water
Lime or Lemon Juice
Season w/paprika/Curry Powder/Cilantro/Parsley
Arrange prepared ingredients on a platter; drizzle with dressing and serve cold.
