Prep Time:Less than 30 min

Easy to make, nutritious and very tasty- will be a great and warming dish on cold days. This recipe is not exactly Polish because beans can be found all over the world. But this particular recipe reminds me of my childhood when I came home on a cold day and a hot bowl was waiting for me at the kitchen table...

2 tbsp olive oil
100g-150g sausage,  (chorizo or any other kind with strong flavor or the one you prefer)
1 onion, peeled and chopped
3 cloves of garlic, peeled and crushed
5-6 ripe tomatoes, peeled and chopped (optionally 2 cans of tomatoes)
2 cans of bean, drained (white or red)
1 tbsp fresh thyme
1/2 lemon zest
1 tbsp sugar (or less when tomatoes are ripe and sweet)
parsley, finely chopped
*bruschetta or a slice of bread

Heat the olive oil in a large frying pan, then add sausage and fry it until brown and crunchy. Add chopped onion, stir and fry util the onion softens. Then add crushed garli and tomatoes. Let it simmer until tomatoes change into sauce. Add beans, thyme, lemon zest and sugar and mix it all together. Leave it for about 5 minutes. Add parsley stir and switch off the heat.

* In the meantime put bruschetta or bread into a toaster. You want to have it nicely brown and crunchy.

Serve in a small bowl with bruschetta aside.
