SILK HOMEMADE YOGURT
32 oz Silk Almond Orig/Light Milk
1/2 Cup plain Greek yogurt (Starter Batch)
1 T corn starch
Need a yogurt maker (electric), pitcher, candy/liquid thermometer. In a saucepan, stir in milk, before boiling begins add corn starch mixed with warm/hot water (mix to paste). . Bring liquid to a boil and remove from heat. Check temperature, 180 deg. If under 180 deg, return to heat for a few seconds (recheck temperature). . Allow liquid to cool to 115 deg (range, 110--115 deg). Pour into pitcher, pour into glass jars for 12 hrs. After cycle is completed, place jars with lids in refrigerator for 4 hours. For a thicker creamier yogurt,or to use as a dip, strain through a cheese cloth. Otherwise you can add sugar, thickened fruit or chopped nuts. .
