Vegetarian rice pilaf

Ingredients
  • 2 teaspoons olive oil
  • ½ brown onion, finely chopped
  • 1 clove garlic, peeled and minced
  • pinch dried chilli
  • ½ tsp turmeric
  • ½ red capsicum, diced
  • 1 stick celery, diced
  • ½ cup sliced mushrooms
  • ½ cup brown rice
  • 1 cup water
  • ½ cup frozen corn
  • ½ cup frozen peas

 

Method

1.      Heat oil in a deep frying pan over medium-high heat until sizzling. Add onion and garlic, and cook for 3 minutes or until tender, stirring frequently. Add chilli, turmeric, capsicum, celery and mushrooms, and continue stirring until mushrooms are tender – about 3 minutes. Add rice and stir to coat in mixture.

2.      Add water to pan and bring to the boil. Cover and reduce heat to low. Cook for 30 minutes. Add corn and peas and cook for 10 minutes or until rice is tender and water has been absorbed. Serve.
