My Aunt gave me this recipe and I adore it! It's customizable/flexible too! (I usually make it without cilantro, green onions, or salt)

For the salad:
2 (15oz) cans black beans, rinsed and drainedJust mix everything together in a big bowl.
1 can corn kernals
1 avacado, peeled, pitted, & diced (a good one is just a little soft)
1 red bell pepper, chopped (green or yellow okay too)
6 green onions, thinly sliced
½ cup chopped fresh cilantro
For the dressing:
1/3 Cup Fresh Lime/lemon juice Mix everything together really well, then pour it over the beans and veggies. Stir everything to coat it with the dressing, and there you are, a yummy salad!
½ Cup Olive Oil
1 clove garlic, minced
1 tsp salt
1/8 tsp ground cayenne pepper
It's especially good the next day!
