Every year I make a St. Nicholas Cake, packed with juicy dates and crunchy walnuts. Check out my gluten-free version. It's not quite as good as the wheat version, but still delicious. My daughter is gluten sensitive and I wanted to have something she could enjoy.
I have ideas on how to improve the recipe for next year. I might make it again with some slight changes for the Twelfth Night feast! Enjoy this one for now.
