1 C lentils (pre soak in water) 1/2--3/4 C crumbled Tofu 1/3 C Chopped sweet Onions 1/4 C Chopped Celery 1/4 C Chopped red Pepper 1 Can Tomato Sauce 1/2 C Whole Tomatoes w/Juice 1-2 Tbl Raw Sugar 1-2 Tsp Canola Oil 1-2 Tbl fresh chopped Cilantro Spices (Cumin) Paprika, Chilli Powder To Taste 1 Tsp Lime Juice
After soaking lentils for 40-60 min, boil w/few drops of oil and sage leaves until tender, set aside. . Prep chopped ingredients and sauteed them in oil until tender. Add crumbled tofu for 3-5 minutes, remove from heat. Meanwhile cook tomato sauce and tomatoes (add 1 tsp oil, sugar, lime juice crushed sage), plus (if needed) 1-2 tsp corn starch mixed with water, pastelike, to thicken sauce. Add all cooked ingredients to tomato sauce and cook for 5-10 minutes. Serve on bread (wheat/corn) topped with vegan/veg cheese. Enjoy.
