Enrejado de verduras
Receta extraída del libro "Cocina vegetariana" de Jenny Stacey, pero adaptada a la versión vegana.

  • Tiempo total:
    50 Minutos
  • Para 4 porciones
INGREDIENTES
  • 450-500 gr pasta hojaldre preparada (sin ingredientes de origen animal)
  • 2 dientes de ajo
  • 1 puerro
  • 1/2 pimiento rojo
  • 1/2 pimiento amarillo
  • 50 gr champiñones
  • 100 gr espárragos verdes pequeños
  • 2 cucharadas de harina
  • 1/2 vaso de caldo vegetal
  • 2 cucharadas de vino blanco seco (o tinto)
  • margarina vegetal
  • sal
  • pimienta
PREPARACIÓN

  1. Derrite 2 cucharadas de margarina en una cazuela y saltea unos 5 minutos el puerro cortado a tiras, y los ajos chafados en un mortero con un poco de sal. Remueve con una cuchara de palo.
  2. Añade el resto de las verduras lavadas y cortadas, y rehógalo todo unos 15 minutos a fuego medio, sin dejar de remover a cada rato, con mucho cuidado, para que no se peguen al fondo.
  3. Añade la harina y rehoga un minuto más. Retira la cazuela del fuego y agrega el caldo vegetal y el vino. Vuelve a ponerlo al fuego y llévalo a ebullición, removiendo, hasta que espese. Salpimenta al gusto.
  4. Extiende con un rodillo la mitad del hojaldre sobre una superficie enharinada, y forma un rectángulo de unos 40 x 15 cm. Coloca sobre una bandeja para el horno forrada con papel de hornear humedecido. Deposita el contenido de la cazuela sobre esta pasta, dejando un reborde libre de 2 cm.
  5. Extiende de la misma manera la otra mitad del hojaldre, y hazle unas incisiones en diagonal con un cuchillo, a una distancia de 2 cm del borde. Colócalo encima del otro con las verduras, y sella bien los bordes para que no se salga el relleno.
  6. Pinta la superficie del enrejado con un poco de margarina vegetal, y cuécelo al horno precalentado a 200º C durante 30-35 minutos, hasta que suba y esté dorado.
  7. Sirve inmediatamente.
