Since I am preparing to plant some awesome veggies tomorrow, I thought I would share me recipe for Perfect Veggie Soup. My DH loves this and didn't believe me when I said I made it from scratch. (Not sure what that says about my cooking, but this soup really does rock-and it is Vegan, gluten and sugar free, so almost anyone can eat it!)

Saute one whole finely diced onion, 3 cloves of finely diced garlic, and 3 large carrots-chopped, in 1 tablespoon of olive oil until onions are just beginning to caramelize. Add 8 cups of vegetable broth slowly and bring to a boil. Add 1 cup corn (fresh or frozen), 1 cup peas (also fresh or frozen), 2 stalks of celery finely chopped, and one can of diced tomatoes or 2 medium diced tomatoes. Add thyme, rosemary and sea salt to taste. Reduce to a simmer. The longer it cooks the more flavor you will get out of all the veggies and herbs. Enjoy!
