Bread & Butter Slices

2-1/2 cups sugar     2 cups cider vinegar
1 cup water         1 tsp. each salt and celery seed
1tbl mustard seed     1½ tbls. whole mixed pickling spice
3-1/2 lbs. med-sized cucumbers (unpeeled), sliced 1/4" thick

Prepare 5 pt sized canning jars. In a 5-qt pot, combine sugar, vinegar, water, salt, celery seeds, mustard seed, and pickling spice. Bring to a boil, stirring to dissolve sugar. Add cucumber slices to syrup. Return mixture to a boil, turning cucumbers gently to coat with syrup. Continue boiling for 1-1/2 min.; remove from heat. Fill one hot jar at a time with boiling hot mixture. Fill to within 1/8" of rim. Wipe rim with a damp cloth and screw on band as tight as you can. Continue with remaining jars.


Apple Caramel Syrup

4 cups apples (with juice)      3 cups sugar 
½ cup Karo syrup 
¼ - ½ cup Mrs Richardson's caramel topping

1.  I happened to over cook my apples after I peeled and cored them so they were to soft to even try to get them out and drain them. 
2.  (I had a canner full of apples.) So I mashed them with the juice, (left some lumps) and came up with this recipe. 
3.  You can use it as Ice cream Topping, or Pancake/waffle syrup. 
4.  I put the apple mixture in a kettle and heated. 
5.  I added the sugar, Karo Syrup,& Mrs. 
6.  Richards Caramel Topping and brought to a boil for a couple minutes and put into pint jars and process them for 30 minutes to make sure they sealed.
