This can be a really perfect addition to other typical Puerto Rican horsedeurves such as crackers with queso de papa, chorizo al jerez, avocado mousse, olives with ham or salami, or diced guava preserves, served with toothpicks, of course.
The cheese usually used for this dish is called Queso del país, queso blanco, or queso de hoja. It is a typical Puerto Rican white cheese made from cow's milk which does not melt. You are more than welcome to use your favorite cheese. I also like this made with fresh mozzarella cheese.
The cilantro in this white cheese mix really gives it that special "tropical touch", but, feel free to experiment with other flavors, such as chives, fennel, basil, mustard seed, crushed cumin seed, sage, rosemary, coriander, red pepper flakes, or even chiles. A touch of garlic may also give it the extra kick you seek!
The recipe below serves around 6 people armed with a healthy appetite.

INGREDIENTS:
3 cups olive oil (make sure to use a good oil - why sacrifice the dish and use a horrible tasting oil) 1 tablespoon dried oregano, crushed 4 tablespoons fresh cilantro, coarsely chopped 2 bay leaves 6 black peppercorn, freshly crushed 1 1/2 pounds white cheese of your preference, cut into large bite sized cubes
DIRECTIONS: - Combine the herbs, spices, and oil in a bowl.
- Pour over the cheese.
- Gently toss through.
- Seal bowl with plastic wrap or spoon into a sterilized container with a tight fitting lid.
- Allow flavors to develop by marinading overnight or for best flavors 48 hours.
- To serve, stick tooth picks into cheese.
