This a really cool recipe if you just got home from work and don't feel like cooking too extravagantly!! Here goes!

Lge pkt of hash browns
425g can baked beans
4 eggs
4 rashers bacon
3/4 cup grated cheese
Black pepper to season
Chopped parsley to garnish

Place the hash browns in the base of a 16 x 26cm baking dish, trimming where necessary.
Pour over the baked beans, and even out.
Beat the eggs together, and pour over the top of the baked beans.
Finely slice the bacon, and sprinkle on top of the eggs. Sprinkle over the cheese, and season with pepper, if wished.
Bake at 220 degrees celsius at the top of the oven for 30 minutes, until set. Stand 2 minutes, before serving. Sprinkle with the chopped parsley, if using. Serve in wedges.

Good for cold winter nights! Happy Eating!!
