Recipe: Lipton Soup...Puerto Rican Style (Sopa de Lipton....a lo Boricua)

This is going to sound hysterical but this recipe is an invention of necessity and it is actually quite good, economical AND quick! It's a delish comfort soup with a side of tostones or fried yuca!

INGREDIENTS:

1 teaspoon olive oil (or to taste)

1 tablespoon sofrito

1 teaspoon adobo or salt (or to taste)

1/8 teaspoon black pepper

2 packets Sazón Goya 

3 garlic cloves, minced (or to taste)

2 small potatoes, cut in cubes

1 Packet Lipton chicken noodle soup

1 Bullion Cube, preferably vegetable flavored

DIRECTIONS:

  • Heat oil over medium heat in large saucepan.
  • Simmer sofrito, adobo, pepper, sazon, and garlic for about two minutes or until fragrant.
  • Add potatoes, packet of lipton, and bouillon cube.
  • Add water until it is about 2 inches above the ingredients.
  • Bring to boil.
  • Reduce heat to simmer.
  • Cover.
  • Cook about 30 minutes.
