A cortado is an espresso, usually served in an espresso cup, and "cut" (from the Spanish word cortar) with a small amount of warm milk to reduce the acidity. I would describe it as a mini capuccino.
The ratio of milk is between 1:1 - 1:2, and the milk is added after the espresso. The steamed milk hasn't much foam, but many baristas make some micro foam to make latte art. It is popular throughout most of Latin America and is typically drunk in the afternoon.
There are several variations, including cortado condensada (espresso with condensed milk) and cortado con leche y leche (with condensed milk and cream on top).
INGREDIENTS:
2 ounces espresso, fresh brewed
2 ounces milk, steamed
OR
1 ounce milk + 1 ounce unsweetened evaporated milk (for a richer flavor without added sweetness), steamed
OR
1 ounce milk + 1 ounce sweetened condensed milk (for a richer flavor plus added sweetness), steamed
DIRECTIONS:
Pour espresso into a espresso cup.
Gently pour milk over espresso.
