Recipe: Shrimp, mango, and apple salad

This salad is very easy to prepare... a quick and delicious summer dish!!!

 

1 lb shrimp, peeled and deveined

3 tbsp pineapple juice

3 tbsp lemon juice

1/4 cup olive oil

2 large mangoes, peeled and diced

1/2 cup chopped red onions

3 tbsp chopped cilantro

2 cups diced Granny Smith apples (may use papaya instead)

 

Boil shrimp for two minutes, refrigerate until cool.

Whisk fruit juices with oil. Season with salt & pepper.

Mix all ingredients and pour dressing over.

Serve over lettuce leaves and enjoy!!!
