Here is a simple recipe from a beginner cook. I found it on a Turkish site but can't seem to find the link now. But it's one of my favorite dishes.

Ingredients: 2 red peppers, 2 whole onions, lentils (60g), rice (60gr), 1 bay leaf, 2 tbsp chopped parsley, 2 tsp lemon peel, salt and pepper, 1tbsp olive oil

Cut peppers in half keeping stalks on. Bake in oven preheated to 360°F until the outside is brown. Saute diced onions in 1 tbsp olive oil. Rinse lentils in cold water and boil with bay leaf in 400mL water. Simmer on low heat for 15 min. Add 1 of the onions & rice, and salt & pepper to taste, simmer 15-20 min more. Keep cooking the other onion until pink. Stuff the peppers with the mixture, adding pinker onions last. Sprinkle parsley and lemon peel over the dolmas.
