Recipe: Orange Muffins

                               Orange Muffins

                   1 1/2 cups whole wheat flour

                   1/2cup bran

                   1/2 cup raisins

                   1 1/2 teaspoons baking soda

                    3/4 cup orange juice

                    1/4 cup egg substitute

                    1/4 cup honey

                    2 tablespoons canola oil

                    Grated rind of 1 orange

     In a large bowl, combine the flour, bran, raisins,

     and baking soda.

     In a medium bowl, mix the orange juice, egg

     substitute, honey, oil and orange rind.

     Stir the liquid ingredients into the dry ingredients

     until just blended. Do not overmix.

     Coat 12 muffin cups with nonstick spray. Fill

     about three-quarters full with the batter. Bake

     at 375*F for about 15 minutes.

                                                          Makes  12
