Recipe: West Indian Cherry Mojito (Mojito de Acerola)

Acerola is a tart tropical cherry native to Latin American and found widespread throughout the Caribbean. The most awesome thing about this tiny fruit is that it packs a powerful punch....a bijillion doses of Vitamin C in one serving!

In this cocktail recipe the acerola mojito is sweetened with "miel de caña", sugar cane honey or simply put concentrated sugar cane juice. Concentrated sugar can juice has 10 times the minerals of brown sugar and 100 times more than refined white sugar. Agave nectar works well with this cocktail if you can't find the sugar cane honey.

With all the vitamin C and antioxidants in this single serving cocktail you can eat, drink, and be healthy!

INGREDIENTS:

1/2 lime, cut into 4 pieces

10 mint leaves, plus additional sprigs for garnishing

1/2 ounce sugar cane honey (about 1/2 tablespoon)

2 ounces acerola pulp (about 2 tablespoons)

2 ounces rum (about 2 tablespoons)

crushed ice

club soda

DIRECTIONS:

  • Muddle the lime, mint, and sugar cane honey in a thick wallted glass.
  • Mix in acerola pulp
  • Add the rum.
  • Top with crushed ice.
  • Add a splash of club soda.
  • Cover and shake.
  • Pour into serving glass.
  • Garnish with a sprig of mint.
