This recipe is from the book Natural Magic by John Michael Greer

1 Tbs yeast
3/4 Cup water (warm)
2 Cup Flour
1/2 Cup steel-cut oats (also called Irish/Scottish Oats)
dash of salt
1/3 Cup honey

Stir yeast into water and let set for 10 minutes or until foamy.
Mix together: flour, oats, salt.
Once the yeast and water are foamy, mix into the flour mixture along with the honey. Knead until dough is fiberous looking. Roll dough into a ball, put into a floured bowl and let sit for at least 30 minutes.
After 30 minutes, punch the dough down and reform it into a ball. Let set another 30 minutes.
Afer 30 minutes, punch dough down again. Form into the shape you wish to bake it in. I like to braid my bread. Put on greased cookie sheet. You may brush the bread with slightly beaten egg if you wish to have a glossy look.
Preheat oven to 450 degree F. Allow the dough to rise a bit while the oven is heating up. Once the oven gets to 450, put the bread in and immediately turn the oven down to 375. I can't recall what this technique is called, but it works wonderfully for this bread.
Bake bread for 17 - 23 minutes. You will know if it is done if it makes a hollow sound when you tap the bottom of the bread.

I make this all the time. It is really good and is always a hit when people come over. It is also surprisingly easy.
