Dressing:     1/2 cup Extra Virgin Olive Oil

                     3 Tablespoons Apple Cider Vinegar

                     1 Clove Crushed Garlic

                     1 teaspoon Salt

                     1/2 teaspoon Black Pepper

Salad:          1 cup Brown Rice, cooked

                    6 ounces Feta Cheese

                    1 can Black Beans

                    2 medium Tomatoes, chopped

                    2 Green Onions, chopped

                    2 Stalks Celery, chopped

                    1/2 cups Green Pepper, chopped

                    2 Tablespoons Fresh Basil, chopped

                    2 Tablespoons Fresh Parsley, chopped

                    2 Tablespoons Fresh Oregano

Optional:      Lemon Wedges

Mix all of the salad ingredients together and then pour on the dressing and fold into salad. Chill for two (2) to (6) hours before serving. Serve each portion in a pretty bowl with a couple of lemon wedges along the sides. Enjoy!
