This is a "fast" slow-cook recipe...
Cover1 or 2 cups dry beans with boiling water and let soak 20-30 min, the longer the better
After soaking drain liquid and put beans in slow cooker, cover with water. Add a bay leaf and a salt-free seasoning mix - do not add salt! If you do your beans will never get soft!
Turn slow-cooker to high and simmer, checking occasionally for water, for 3 hours or so. Add GF BBQ sauce, a scant 1/4 c. brown sugar, a dash of Worcestershire sauce and a tablespoon of tomato paste (I would have added miolasses instead of the brown sugar but I was out!) Cook on high another 20-30 min testing beans for doneness. Once soft - now you can salt and season to taste. Serve with a sprinkling of cheddar cheese and some tortilla chips. Rib-sticking good!
