"It's the little things that matter
As you travel down the road.
And there's joy and great contentment
In sharing someone's load.
To you it's such a little thing
And hardly worth the time,
But, brother, it can mean a lot
With a long hard hill to climb.
Our lives are filled with ups and downs;
More downs than ups, it seems.
And often times a helping hand
Brings closer still our dreams.
If there be that which we may do
To lighten someone's way.
Let's do it, then, and thank the Lord
This was our lucky day."

~ L. Noyes

When the road you're trudging seems all uphill,

And you want to smile, but you have to sigh,

Rest, if you must — but don't you quit!"

Wishing everyone a very happy and safe Thanksgiving.

I live in Yokohama (Japan) and the traditional Thanksgiving as Americans know it is not a custom in the country I live in.

However, the idea of giving thanks can always be shared and passed around.

Category: Casseroles
Cuisine: Japanese
Prep Time: Less than 1 hr
Ingredients
4 potatoes (peeled, sliced thin)
2 onions (peeled, sliced thin)
1 carrot (peeled, sliced thin into discs)
1/2 head of cabbage (sliced thin, core removed)
1 teaspoon paprika
1 clove garlic (peeled, minced)
3 bay leaf
2 chicken boullion cubes
1/3 pound ground chicken breast
a little oil for cooking meat
hot water

Method
1) Saute the ground chicken in a teflon pan until it is just cooked and sprinkle with paprika. Set it aside.
2) Prepare the vegetables.
3) In a Corningware dish (or a pan that can be cooked with on top of the stove), begin layering one-half of the vegetables... cabbage, onions, carrots, potatoes, prepared meat, sprinkle minced garlic over meat, and repeat with the other one-half of vegetables... potatoes, carrot, onions, and end with cabbage.
4) Mix the 2 boullion cubes with hot water. Pour into the casserole. Fill casserole dish with water until almost covering the vegetables.

6) Simmer until the vegetables are fully cooked.

Serves 3-4 persons.
