So I was watching the news last night and they had a huge segment about the rising cost of food and other goods due to the rising price of gas. As I am sure everyone is aware that prices of everything are going up, they didn't mention what can be done to stop or slow it. I have an idea- BUY LOCALLY!!!!
Sounds like a no brainer, but they never mentioned it. It cost money to ship things long distances. It is going to cost a lot more to bring an apple from California to Nebraska than an apple from Nebraska to Nebraska Buying locally and in season could save tons of money in transportation costs (which is why the price of our groceries have gone up).
I try to buy locally whenever I can. It is actually cheaper now than to go to the grocery store. I was at Whole Foods and saw that a dozen organic eggs were over $3 a carton and up to $5. Even Walmart's eggs are almost $3 a dozen. Well, I can get eggs from my local food co-op (which happens to be 2 blocks from my house) for $2.50 a dozen and they are even free-range and hormone free as well. They come from a local farm just 25 miles from Omaha. The eggs from Whole Foods came from Texas. That means everything is fresher,too!
Even here in Omaha, Nebraska I can find almost everything I need from a local producer (food wise). I don't even have to wait for the farmers markets in the summer. The Nebraska Food Coop offers all sorts of thing all year long from farmers within 100 miles of me. I can even find milk, cheese, yogurt and butter from local dairies at major grocery chains. I do not know how other states work, but I have no doubt that anyone can find things locally regardless of where they live. They just have to look. It has even come about that local (and even organic) is no longer more costly, it has actually become cheaper than going to the grocery store.
My tip for the economists and environmentalists around the country-encourage buying locally, then nobody has to waste gas and money transporting something from another country or state that is already available only a few miles away.

Recipe: Perfect Veggie Soup

Prep Time: Less than 1 hr
Special Considerations: Vegan
Since I am preparing to plant some awesome veggies tomorrow, I thought I would share me recipe for Perfect Veggie Soup. My DH loves this and didn't believe me when I said I made it from scratch. (Not sure what that says about my cooking, but this soup really does rock-and it is Vegan, gluten and sugar free, so almost anyone can eat it!)

Saute one whole finely diced onion, 3 cloves of finely diced garlic, and 3 large carrots-chopped, in 1 tablespoon of olive oil until onions are just beginning to caramelize. Add 8 cups of vegetable broth slowly and bring to a boil. Add 1 cup corn (fresh or frozen), 1 cup peas (also fresh or frozen), 2 stalks of celery finely chopped, and one can of diced tomatoes or 2 medium diced tomatoes. Add thyme, rosemary and sea salt to taste. Reduce to a simmer. The longer it cooks the more flavor you will get out of all the veggies and herbs. Enjoy!


Eating vegan meals is good for our hearts and the earth! Even better- go organic and local for your foods whenever you can. You may be surprised what is available right where you live!

Blog: Green on a Gray Day  
It is cold gray and rainy here on St. Patrick's Day, but that didn't stop me from walking downtown to run errands. The rain paused mid afternoon and I took advantage of that. I would have gone earlier, but I couldn't find my umbrella. (mental note: look for umbrella - Spring=Rain)

Important stops:
-Library, why waste money and resources buying when I can borrow for free.
-Pulp, a new shop that only carries locally made paper products, bags, pins, calenders, etc.... and some awesome art. (Bought myself a "Reading is Sexy" pin. I couldn't resist.)
-Used book stores, there are two of them only a few blocks from each other and I can always find a book I am looking for at one of them for a great price.
-Thrift Store, found a super cute glass water pitcher that reminds me of the Kool-aid man only without the face and legs on it.
-Jane's Natural Market, great place to get some raw local honey and milk from a local dairy.

I love my neighborhood! Everything I need is so close I never have to drive. I save gas and money and burn a few extra calories, too. Not a bad Monday considering the cold and rain.
