Pumpkin Bars

2 C. flour
2 C. sugar
2 t. baking powder
1 t. baking soda
1/2 t. salt
2 t. cinnamon
1/2 t. cloves
4 eggs
2 C. pumpkin
1 C. vegetable oil
Mix all dry ingredients and set aside. Mix wet ingredients. Make a well in the dry ingredients and add liquid mixture. Beat well. Pour into a greased and floured jelly roll pan. Bake at 350 for 25-30 minutes. Spread with cream cheese frosting when cool.

Cream Cheese Frosting
8 oz cream cheese softened
1 stick and 2 t butter
2 t. vanilla
3 1/2 C. powdered sugar
Mix all ingredients until smooth and creamy.

Banana Split Cake

1-1/2 cups HONEY MAID Graham Cracker Crumbs
1-1/4 cups sugar, divided

1/2 cup (1 stick) butter, melted

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened

1 can (20 oz.) crushed pineapple, drained

6 medium bananas, divided

2 cups cold milk

2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding & Pie Filling

2 cups thawed COOL WHIP Whipped Topping, divided

1 cup PLANTERS Chopped Pecans


MIX crumbs, 1/4 cup sugar and butter; press firmly onto bottom of foil-lined 13x9-inch pan.

Freeze 10 min.

BEAT cream cheese and remaining 1 cup sugar in bowl with electric mixer until well blended. Carefully spread cream cheese mixture over crust; top with pineapple.

Slice 4 of the bananas; arrange over pineapple.

POUR milk into large bowl. Add dry pudding mixes.

Beat with wire whisk 2 min. or until well blended.

Stir in 1 cup whipped topping; spread over banana layer in pan.

Top with remaining whipped topping; sprinkle with pecans.

Refrigerate 5 hours.

Just before serving, slice remaining 2 bananas; arrange over dessert.

MACHO NACHOS

1 can refried beans
1 large bag white corn tortilla chips
1 medium onion, chopped
1 cup shredded pepper jack
1 jalapeno, sliced crosswise, plus extra for garnish
1 can chili, or your favorite chili recipe
1 cup shredded Cheddar
1 cup sour cream
1 cup green onion, chopped
1 tomato, diced

Have all the prepped ingredients easily accessible to assemble nachos.
Preheat the oven to 350 degrees F.

In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos. On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with some onions, jack cheese, and jalapeno slices. Spoon on chili and top that with Cheddar. Repeat this layering process until ingredients are used up. Save some of the jalapeno slices for garnish. Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeno slices and serve hot.

OUR FAMILY'S

FAVORITE SUGAR COOKIES

7   CUPS   FLOUR
5   tsp    BAKING POWDER
1   tsp    SALT
3   CUPS   SUGAR
2   CUPS   CRISCO
4          EGGS  WELL BEATEN
1   CUP    MILK
2   tsp    VANILLA


Mix all dry ingredients, including sugar.  Cut in Crisco with pastry
cutter, or two butter knives.
Add eggs, milk and vanilla.  You will have to stir this by hand. 
And you may have to add more flour if dough is too greasy feeling.
Divide and shape the dough into two balls.  Place in air tight
containers or wrap in plastic wrap and refridgerate for at least 2
hours.
Roll out dough on floured surface. Thicker dough makes softer
cookies.  Cut into desired shapes and bake on lightly sprayed or
ungreased cookie sheet for 6 to 10 minutes  at  375 degrees
Cookies are done when they turn brown around the edges. 

Let cookies cool on the sheet for 3 to 5 minutes then place them on rack to finish cooling. 
Frost and decorate

Frosting Suggestion:
4   CUPS  POWDERED SUGAR
2         EGG WHITES
1   tsp   VANILLA
1/8 tsp   SALT
1   Tbsp  WATER
1/3  CUP  MARGARINE   (2/3 OF A STICK)

Beat all ingredients with a mixer for 5 minutes.   Add food coloring
if desired.  

I have used this recipe for Christmas, Valentines, Halloween, ST.
Patrick's day, New Year's and Super Bowl!  They are so good!

German Pancake 
This is a puffy pancake,with a sweet taste.

6 eggs
1 cup milk
1 cup flour
1/2 teaspoon salt
2 tablespoons butter

6 servings 1 pancake Change size or US/metric

25 minutes 5 mins prep

  1. Preheat oven to 400 degrees.
  2. Place butter in 9x13 baking dish and place in oven to melt butter,tilt to coat bottom of pan.
  3. Place remaining ingredients in blender jar,blend until smooth.
  4. Pour into buttered baking dish.
  5. Bake for 20 minutes or until golden.
  6. Sprinkle with powdered sugar,cut into squares,serve warm.
  7. Serve with favorite syrup.
THESE ARE THE ONES I USED TO MAKE FOR THE BOYS!  K.C.'S MOM GAVE US THE RECIPE
