Included is a lower cal/carb option for those of us who watch our sugar intake - see the note below!
Here's the sugar guide: Ratio: one cup sugar to one cup chopped fresh figs (it works the same for one pound of sugar to one pound of fresh figs; one palmful of sugar to one handful of figs -- you get the picture...)
Grated lemon zest or finely sliced bits of lemon (the paper thin slices make the preserves delightfully like a marmalade - leave them out if this does not please you)***
Basic Directions: Cut up the figs as fine as you like. Mix the figs with the sugar and let rest in a covered plastic or glass container overnight. The next morning, cook the mixture down over very low heat until it is soft and thick. Spoon into hot canning jars and cover with lids you've had soaking in boiling (hot) water. The lids will seal as the jam cools. Refrigerate any jars that do not compress and seal.
That's basically it and the recipe has been winning blue ribbons for generations. Everything else is the individual cook's imagination. We like it less sweet and cut back on the sugar. We have had this with a lot of citrus grated and sliced into it; with raisins cooked into it; with cinnamon and other spices. Be careful - the taste of the figs is rich but light and can be quickly overpowered. We recommend trying a straight batch first and then getting adventurous.
*** New low sugar option! Try the Fig Preserves recipe with "Splenda for Baking" (which is one half sugar and one half Splenda) instead of sugar and since I don't like the sweetness to overpower the figs I used only 2 cups of "Splenda for Baking" for every 8 cups figs. The result was spectacular! Delicious! - (There really is a difference in using the Splenda for Baking, so I'd follow these directions closely! )
Gourmet Variation: A delicious addition to a fig preserve recipe is a drop or two (per jar) of maple flavoring to enhance the natural flavor of the figs. The maple adds just the right touch to the natural flavor of the figs, but only add just a drop or two per jar -- not enough to even be able to identify it as maple. MZ
8 tablespoons Splenda (or sugar if you prefer) 1/8-teaspoon salt 5 cups water 2 teaspoons cinnamon ground 1/2 teaspoon dried ginger ground 1/2-teaspoon allspice ground 4 cup-size standard tea bags 1-1/2 teaspoons vanilla extract non dairy creamer Directions Place first 7 ingredients in medium boiler. Bring liquid almost to a boil. Turn off heat and remove pot from heat. Place the tea bags into the liquid; cover and steep for about 15 minutes. This is an important step to rid the liquid of the granular texture of the spices ... Strain the tea liquid through a fine sieve into an ice-cooled bowl. Cooling down the tea quickly helps it to last longer. Allow cooling a bit and then add the vanilla extract. Refrigerate until ready to use. To make a cup in a 12 oz mug ... add non dairy creamer to the mug and add chai tea to desired level in mug. Microwave on high 1-2 minutes. Mixture is good for about a week.
America is in Iraq and waging war, into our fifth year. Whether you agree with this act or not, we are there. I have trouble in accepting a need for war; I hear my spirit say there is another way…always-another way. But we live in a world that is not guided by my Pagan philosophy; we have to deal with life the way it is and war is the way it is now.
We Pagans are also in the military; we are waging war, we are also fighting against it. We are doing what each of us feels is honorable and necessary for the good of all. We who fought the need of war must believe that the universe will hear our cries and will make things better, with less chaos and less death for the innocent. We must remember that war has always happened and always will until we all make ourselves responsible for peace. For those who are in the battles, who are carrying out their oaths to this country…we hold you in our hearts and may the gods bring you back home to your loved ones in honor and in safety. Those who die over there in Iraq or Afghanistan, they get their symbol of belief on their headstones...but not so the Pagan soldiers. For 10 years that has been a sign of respect that Wives and Mothers and Daughters have been fighting for, for thier fallen loved ones...it will be going to court. To think Americans would have to go to court to get the same respect as any other religion...but Wiccans and other Pagans are there fighting and dieing.
A non-Pagan friend gave me a picture. He knew I would enjoy it and needed a lift. This picture is of The Tholos, a temple to the Gods of Time, and over it is the analemma; if you could record the position of the sun in the sky at the same time every day, let’s say sometime around noon and subtracting one hour if you are observing daylight saving time, you would notice that the sun takes a rather strange path. You might notice that at certain times throughout the year the sun's position not only varies higher and lower (North and South) as you would expect with the change of the seasons, but also slightly east and west. This figure-eight path that the sun makes in the sky is called the analemma.This lazy-eight path in the sky is what can be seen as the symbol for Eternity, how appropriate to see the symbol of Eternity over the Temple of the Gods of Time in the ancient place of Delphi. Time, The Wheel of the Year, one Sabbat that follows another, spring, summer, fall, and winter; each season follows another. We celebrate these seasons, these times of change. We should never forget that our ancestors also followed seasons of change and from them we have come. What seasons of change will we leave for those who will call us ancestor? What world will they be blessed with? The world can be of peace or war for them and for our Mother Earth. The movements of the Sun will be eternal; the Moon will shine Her light on a barren world or our Green Mother. It is up to us. What will we do with the Time the gods have given us…?
