Savory Artichoke Stuffing
Preheat oven to 375.
1 can artichoke bottoms or hearts or both, roughly chopped
1 full sized packet Savory Herb flavored StoveTop Stuffing mix
1 stick butter
1 can petite diced tomatoes, completely drained
1/2 cup freshly grated parmesan cheese (not the powdered kind!)
1/2 lemon, seeded (to juice)
Melt the butter and pour into a glass or metal 8x8 baking dish. Toss the StoveTop Stuffing mix in the butter until all pieces are coated.
(this might take a minute because there is more stuffing than butter)
Bake the stuffing/butter mixture for 5 minutes just to toast the stuffing, then remove from the oven.
Add the tomatoes, artichokes & parmesan and toss thoroughly, then squeeze the lemon half over the mixture.
Bake for 10-15 minutes just to warm the dish thoroughly. Take care not to let the stuffing mix burn. The freshly grated cheese will not melt
but should become slightly soft and more flavorful. Most of the stuffing will absorb the butter and moisture from the tomatoes and some
will remain crunchy, adding a really interesting texture. This recipe can easily be doubled or tripled.
