Smooth, creamy, and easy. It can be low or high in fat, depending on whether you use cream, nonfat milk or something in between. Use dried cherries, blueberries, or cranberries if you have them, or if not, currents or raisins.
2 eggs, beaten 1/2 cup sugar 1/4 teaspoon salt 2 cups milk (any octane you prefer--the richer the milk, the richer the result) 2 cups cooked rice 1/2 cup raisins 1 teaspoon vanilla nutmeg
Beat eggs, sugar, and salt together. Scald milk until a film forms on top and pour into egg mixture. Add rice, raisins, and vanilla. Stir to combine. Set a pan in the oven large enough to hold 1 inch of water and 6 custard cups or a 1 1/2 quart casserole. Set cups or casserole in pan and fill with hot water. Sprinkle with nutmeg and bake 1 hour and 15 minutes, just until set and knife inserted into center comes out clean. Serve warm or chilled. Serves six.
