HOW MUCH CHEESE DO AMERICAN'S EAT?
In 1970, the dairy industry produced 2.2 billion pounds of cheese. The population of the United States was 203 million, which translates to 10.8 pounds of cheese per person. By 1990, America's population had grown to 248 million, but Americans were eating more cheese, 6 billion pounds worth! That's an average of 24 pounds per person. In 1994, according to the USDA, the average American consumed 27.7 pounds of cheese. America's rate of cheese consumption is skyrocketing. As we approach the new millennium, America's per-capita cheese consumption will break the 30-pound per person level.

The Food and Drug Administration (FDA) allows 750 million pus cells in every liter of milk (about two pounds). In Europe, regulators allow 400 million pus cells per liter. France and Italy are known for their magnificent cheeses. Perhaps that's their secret: Less pus!

Every sip of milk has 59 different powerful hormones. Which ones do you want your little girls to take? Estrogen, progesterone or prolactin?
In her lifetime, as a little girl becomes a big girl, then a mature woman, she will produce the total equivalent of one tablespoon of estrogen. Hormones work on a nanomolecular lever, which means that it takes a billionth of a gram to produce a powerful biological effect.
The average American now consumes nearly thirty pounds of cheese each year. That product contains concentrated hormones. One pound of cheese can contain ten times the amount of hormones as one pound of milk. Nursing cows were never supposed to pass on cheese to their calves. They were, however, designed to pass on hormones, lactoferrins, and immunoglobulins in liquid milk to their infants.
Got American cheese? Got antibiotics. Consumers Union and the Wall Street Journal tested milk samples in the New York metropolitan area and found the presence of 52 different antibiotics. Eat ice cream, yogurt, and cheese toppings, and you're also consuming antibiotics. Cows are fed chicken feces as supplemental protein. The droppings are baked and sanitized but the heat process does not destroy the hormones in chicken feed.

In February of 1999, the Land of Lakes Company recalled nearly four hundred thousand cases of cheese products from supermarkets in every one of America's 50 states. Cheese makes a remarkable culture medium for bacteria, which stay alive for up to six months. This year's recall was due to listeria. Eat listeria and it can take up to 45 days for you to get sick. Would you make the connection?
Cheeses can also contain mycobacterium paratuberculosis which causes diarrhea and irritable bowel syndrome. Forty million Americans are so affected. Got Colby? Got colds!
Corporate-owned factories where cows are warehoused in huge sheds and treated like milk machines have replaced most small family farms. With genetic manipulation and intensive production technologies, it is common for modern dairy cows to produce 100 pounds of milk a day— 10 times more than they would produce in nature. To keep milk production as high as possible, farmers artificially inseminate cows every year. Growth hormones and unnatural milking schedules cause dairy cows' udders to become painful and so heavy that they sometimes drag on the ground, resulting in frequent infections and overuse of antibiotics. Cows— like all mammals— make milk to feed their own babies— not humans.
Dairy products are a health hazard. They contain no fiber or complex carbohydrates and are laden with saturated fat and cholesterol. They are contaminated with cow's blood and pus and are frequently contaminated with pesticides, hormones, and antibiotics. Dairy products are linked to allergies, constipation, obesity, heart disease, cancer, and other diseases.
The late Dr. Benjamin Spock, America's leading authority on child care, spoke out against feeding cow's milk to children, saying it can cause anemia, allergies, and insulin-dependent diabetes and in the long term, will set kids up for obesity and heart disease, America's number one cause of death.
Dairy products may actually cause osteoporosis, not prevent it, since their high-protein content leaches calcium from the body. Population studies, backed up by a groundbreaking Harvard study of more than 75,000 nurses, suggest that drinking milk can actually cause osteoporosis.
According to the U.S. Department of Agriculture, the average American consumes more than 550 pounds of dairy products annually, which is 40 percent of the bulk of the food we eat.
Give the bottle the boot! Instead, try delicious soy or rice milk, soy cheese, Tofutti ice cream, and tofu sour cream and cream cheese. All are widely available at health food stores and many supermarkets.
The biggest lie promoted by the dairy industry in North America is that dairy products are good for us. Due to pressures from a variety of groups, the dairy industry has had to increase their volume of advertising to an unbelievable level, hiring some of the most popular faces in show business to promote their products.
1. FAT AND CHOLESTEROL
Dairy products are high in saturated fat and cholesterol . The dairy industry has cleverly expressed fat content as a % of weight. Using this system, 2%-milk sounds like a low fat product. However, expressed as a % of total calories, 2%-milk is in fact 31% fat! Whole milk is 49% fat, cheese is 60-70% fat and butter is 100% fat. Eating such foods contributes to the development of heart disease, cancer and stroke.
2. IRON DEFICIENCY
Iron deficiency is more likely on a dairy-rich diet. Cow's milk is very low in iron . In addition, clinical studies have shown that infants consuming cow's milk lose some blood from their digestive tracts. For this reason pediatricians recommend that infants below one year of age not be given cow's milk.
Insulin dependent diabetes (Type I) is linked to dairy products. A specific dairy protein sparks an auto immune reaction which destroys the insulin producing cells of the pancreas.
4. OVARIAN CANCER
Ovarian cancer is linked to dairy products. The milk sugar lactose is broken down in the body into another sugar, galactose. In turn, galactose is broken down further by enzymes. According to studies done at Harward, when dairy product consumption exceeds the enzymes' capacity to break down galactose, there is a build-up of galactose in the blood, which may affect a woman's ovaries. Some women have low levels of these enzymes, and when they consume dairy products on a regular basis, their risk of ovarian cancer can be triple that of other women. The problem is the milk sugar, not the milk fat, so low fat dairy products cannot solve this problem. In fact, yogurt and cottage cheese seem to be of most concern because the bacteria used in their manufacture increase the production of galactose from lactose.
Cataracts are also linked to dairy products. The galactose that is a breakdown product of lactose also appears to be capable of damaging the lens of the eye, leading to cataracts.
6. LACTOSE INTOLERANCE
Many people are unable to digest the milk sugar, lactose. Diarrhea and gas can result. On the other hand, they may consider themselves lucky. Those who can tolerate lactose, cannot rapidly breakdown the galactose which circulates in their blood, contributing to cataracts and ovarian cancer, as noted above. Lactose intolerance may be nature's early warning system.
7. FOOD ALLERGIES
Milk is one of the most common causes of food allergies. Respiratory problems, canker sores, skin conditions, and other allergies can be caused by dairy products. The sad thing is that many people never know that their problems are caused by dairy sensitivity. A break from dairy products often leads to surprising improvements. Asthmatics, in particular, should give themselves a long vacation from dairy products to see whether their condition improves.
Like any other animal product, mammary secretions contain frequent contaminant, from pesticides to drugs. About a third of all milk products are contaminated with antibiotic traces. The dairy industry slogan "something for every body" takes on a different meaning, doesn't it?
Dairy products, despite common myths, do not stop osteoporosis. Evidence shows that the rate of bone loss is largely unaffected by dairy products . Numerous studies have shown that the countries with the highest intake of dairy products also have the highest incidence of osteoporosis. High protein foods, such as meat, eggs and dairy products leach calcium from the body by causing excessive calcium loss through the kidneys, making the kidneys work harder and causing loss of minerals such as calcium.
One out of every five babies suffers from colic. Pediatricians learned long ago that cows' milk was often the reason. Moreover, breast feeding mothers can have colicky babies if the mothers are consuming cow's milk. The cows' antibodies can pass through the mother's blood stream into her breast milk and to the baby .

The average American eats nothing resembling the USDA recommended dietary guidelines. According to the USDA itself, in 1994 the average American ate the following:
586 pounds of milk and dairy products
394 pounds of vegetables
199 pounds of meat, and
193 pounds of products containing flour and cereal
121 pounds of fresh fruit.
The average American, rather than following health guidelines of having little or no milk and dairy products -- has milk and dairy as the BASE of their diet. Milk and dairy are the chief ingredient in the Standard American Diet. It is little wonder, then, that heart disease and cancer run rampant in the U.S.
Recombinant Bovine Growth Hormone (rBGH) is a genetically engineered growth hormone many dairy farmers inject into cows to increase milk production. There is evidence that rBGH promotes tumor growth in laboratory animals. Of even greater concern, rBGH significantly stimulates a cow's production of another hormone that's secreted in milk, insulin growth factor-1 (IGF-1); when we consume dairy products that contain IGF-1, we're overdosing ourselves with a hormone that prompts cells in our bodies to multiply -- including cancer cells.
It is impossible to know whether the milk, ice cream, cheese, butter or other dairy products you may consume contains rBGH. This is because Monsanto, the maker of rBGH, successfully lobbied the government to outlaw labeling which would draw attention to milk which is rBGH-free.

The books DIET FOR A NEW AMERICA and THE FOOD REVOLUTION by John Robbins expose the dairy industry's deceit like no other. Robbins, the former heir to the billion dollar Baskin-Robbins ice cream empire, walked away from the family business more than 25 years ago. Robbins made a moral decision not to profit off of a product that abuses and kills cows, and makes people sick. Cow milk is a secretion that oozes from the udder. It's filled with a somatic cell count, commonly known as pus, with the national average hovering around 350 million pus cells per liter. A few years ago, The Hoard's Dairyman, a dairy industry trade journal, ran an article about the pus content in milk. When machines are hooked up to the udders three times a day to suck them dry, the machines, countless drugs and myriad injections of Bovine Growth Hormone cause mastitis, and irritate and infect the udders. Pus, mucous and infections are sucked out with the milk, and pasteurization - which cleans the pus, but does not eliminate it from the milk - creates a concoction of sanitized pus. Organic, chemical-free cow milk is not pus-free either. Soy, rice and almond milks - along with human breast milk - are the only pus-free milks. Mother cows make milk for baby cows, not baby humans, adolescents or adults. The human body has no need for cow milk as it has no need for dog milk, giraffe milk, zebra milk or rhinoceros milk. This is why dairy is responsible for most allergies, asthma, Crohn's disease and childhood ear infections. Cows, like every other female mammal, only produce milk during and after pregnancy. Cows, therefore, are artificially impregnated to keep the milk-flow going. Within two days after giving birth, babies are stolen from their mothers. From a business standpoint, the dairy industry can't have calves sucking up milk they want to sell for huge profits. Like male chicks on an egg farm, male calves are useless by-products of the dairy industry. Unlike the chicks who are killed at birth, calves are sent to veal farms and put in tiny crates with ropes and chains around their necks to completely immobilize them. No movement is ever allowed because no muscle development is allowed. They want the calves to grow large but still retain their infant-white flesh. The veal industry is only in existence because of the dairy industry. If you don't eat veal, but still consume dairy, it doesn't alleviate the suffering of enslaved male calves, or mother cows for that matter. When cows no longer produce quality milk, they're killed. There are no cow sanctuaries in the dairy industry. If you think milk builds strong bones, why do Americans - the largest consumer of dairy products worldwide - have astounding rates of osteoporosis and bone fractures, while Vietnamese - who happen to be 100 percent lactose intolerant - have the world's lowest rates of osteoporosis and bone fractures? In Western societies, we're told that calcium is the answer to preventing bone loss. However, it's not a lack of calcium that causes osteoporosis. Excessive, acidic animal-based protein and a lack of exercise cause osteoporosis. The Lancet, The US Department of Health and Harvard University call the link between meat and dairy based diets and osteoporosis "INESCAPABLE". In spite of milk's high calcium content - most of which cannot be absorbed by the human body - animal protein actually contributes to the acceleration of osteoporosis. Keeping blood at a neutral Ph balance always takes priority over keeping calcium in the bones. Bones can hold out for years with insufficient calcium, but blood cannot. If our blood becomes too acidic, the result is fatal. So the body withdraws calcium from the bones and uses that alkaline mineral to keep the blood's Ph level balanced. Animal products have the most excessive amounts of acidic protein. Eastern societies have the lowest rates of osteoporosis and bone fractures because of their low, mostly plant-based protein diets. The best sources of low acid, highly absorbable calcium are kale, collard greens, cooked broccoli, sesame seeds, soy, figs, blackstrap molasses, cooked navy beans and almonds. Rice milk and orange juice have also been fortified with calcium. Plant-based calcium, plant-based protein and exercise build strong bones and nobody gets killed.

I've been dairy free now for 6 years. Cows milk is wonderful for you...if you are a 60 pound calf trying to grow quickly into a 400 pound cow! For us though, this pus filled, cocktail of growth hormones and saturated animal fat is a cleverly marketed curse responsible for mass ill health in the west; cancer, bone disease, diabetes, constipation, bad skin, all linked to dairy consumption.
Milk being necessary for healthy is a myth. In fact consuming dairy leeches calcium from our bones. America has the highest rates of bone disease in the world while they are the biggest consumers of dairy in the world.
There are lots of plant based milks widely available such as soya, rice and hemp. Some take a while to get used to. After a few weeks your body will feel cleaner and you will experience less health problems like colds, coughs, headaches. Stock up on your calcium through eating plenty of green veg, seeds and tofu.
I used to struggle from the supermarket carrying soya milk. But I recently made a great buy, the Yaoh Hemp Milk Maker. It takes 5 minutes to make it and hemp is the king of milks. You can also make other milks in it like almond or sesame.
