WholeWheat Strawberry Banana Muffins

Ingredients
2 eggs
½ cup unsweetened applesauce
¼ cup olive oil
¾ cup packed brown sugar
1 tsp vanilla extract
3 bananas mashed
2 cups whole wheat flour
1 tsp baking soda
1 tbsp ground cinnamon
1 cup frozen sliced strawberries

1. Preheat the oven to 375o F and grease 24 muffin cups or line with paper liners.

2. Whisk together the eggs, applesauce, oil, brown sugar, vanilla and bananas. Combine the flour, baking soda and cinnamon then stir it into the banana mixture until moistened. Stir in the strawberries until evenly distributed. Divide batter into muffin cups and bake for 20 minutes or until the tops of the muffins spring back when pressed lightly. Cool before removing from the muffin tins.

Makes 24 servings

Whipped Sweet Potatoes And Pears

Ingredients
8 sweet potatoes
4 pears peeled cored and chopped
1 cup evaporated milk
2 tsp vanilla extract
½ cup packed brown sugar
4 tbsp butter
½ tsp ground cinnamon
¼ tsp nutmeg
2 tbsp orange juice
1 cup chopped pecans

1. Preheat oven to 350o F.

2. Prick the sweet potatoes with a fork and bake 1 hour, or until tender.

3. Peel the baked sweet potatoes. Place in a medium bowl and whip until smooth. In a pot over medium heat, gently cook the pears, evaporated milk, vanilla, brown sugar and butter 10 minutes, or until pears are tender. Blend until smooth, in batches if necessary. Stir the puree into the sweet potatoes with the  cinnamon, nutmeg, orange juice and pecans until completely combined. Transfer to a large baking dish and bake for 15 minutes, or until lightly browned.

Hearty Roasted Squash Soup

Ingredients
1½lb. butternut squash halved and seeded
1 acorn squash halved and seeded
½ small spaghetti squash halved and seeded
3 tbsp butter
1 large onion chopped
3 cloves garlic minced
1 tbsp fresh ginger root minced
1 tsp curry powder
2 tart green apples peeled cored and chopped
2/3 cup sherry
5 cups vegetable broth
½ tsp black pepper
¼ tsp cayenne pepper or to taste

1. Preheat oven to 400o F.

2. Place the squash, cut side down, on baking sheets and roast for 45 minutes, or until flesh is soft. Scoop out the flesh into a large bowl. In a pot over medium heat melt the butter and saute the onion, stirring frequently, for 5 minutes or until tender. Stir in the garlic, ginger and curry powder and cook 1 minute then add the apples and sherry and simmer for 10 minutes, or until apples soften. Puree batches of the squash flesh and broth in a food processor or blender and transfer to a large soup pot. Puree the apple mixture and stir into pureed squash. Heat over medium heat and season with black pepper and cayenne, to taste.

Refined Sugar Free Apple Pie

Ingredients
3 tbsp cornstarch
1 tbsp ground cinnamon
12oz. unsweetened apple juice concentrate
6 cups thinly sliced apples
1 9 inch double crust pie  pastry

1. Preheat oven to 350o F.

2. Whisk together the cornstarch, cinnamon and ¼ of the apple juice. Simmer the apples in the remaining apple juice in a pot over medium heat until tender. Add the cornstarch mixture and stir until thickened. Pour apple mixture into the bottom crust and cover with top crust. Seal crust edges and make slits for steam venting then bake for 45 minutes.

Minimal Fat Banana Bread

Ingredients
2 eggs
2/3 cup sugar
2 very ripe bananas mashed
¼ cup applesauce
1/3 cup nonfat milk [or rice, soy, etc]
1 tbsp olive oil
1 tbsp vanilla extract
1¾ cups all purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1/3 cup chopped walnuts

1. Preheat oven to 325o F and spray a loaf pan with non stick baking spray.

2. Beat eggs and sugar in a large bowl until light and fluffy, about 5 minutes. Beat in bananas, applesauce, milk, oil and vanilla. Separately sift together flour, baking powder, baking soda and salt. Stir flour mixture into banana mixture, mixing just until blended then fold in walnuts. Pour batter into prepared pan and bake until golden and a toothpick inserted into center of the loaf comes out clean, about 1 hour. Turn bread out onto a wire rack and let cool.

Makes 12 servings

Apple Oatmeal Cookies

Ingredients
½ cup butter softened
½ cup honey
1 egg
1 tsp vanilla extract
¾ cup whole wheat flour
½ tsp baking soda
¾ tsp ground cinnamon
1 ½ cup rolled oats
1 apple cored and chopped

1. Preheat the oven to 375o F and grease some cookie sheets.

2. Cream together the butter, honey, egg and vanilla until smooth. Combine the whole wheat flour, baking soda and cinnamon then stir it into the butter mixture and then add in oats and apple. Drop by spoonfuls onto the cookie sheets. and bake for 8 to 10 minutes.  Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Makes 4 dozen cookies

Pomegranate Apple Crisp

Ingredients
4 medium apples peeled cored and sliced
½ pomegranate skin and light colored membrane removed
½ cup brown sugar
1 tbsp ground cinnamon
½ tsp ground nutmeg
½ cup rolled oats
½ cup all purpose flour
½ cup sugar
½ cup unsalted butter melted

1. Preheat the oven to 375o F and grease a 9x13 inch baking dish.

2. Mix together the apples, pomegranate seeds, brown sugar, cinnamon, and nutmeg. Spread evenly into the baking dish. Stir together the oats, flour and sugar and rub in the butter between your fingers until the mixture resembles coarse crumbs then sprinkle over the top of the fruit. Bake for 45 minutes or until the apples are soft.

Makes 8 servings

Applesauce Oat Muffins

Ingredients
1 cup rolled oats
1 cup buttermilk
1 cup whole wheat flour
1 tsp baking powder
½ tsp baking soda
½ cup brown sugar
½ cup applesauce
1 egg

1. Place oats in a small bowl, pour in buttermilk. Let sit for two hours at room temperature.

2. Preheat oven to 375o F and grease 12 muffin cups or line with paper muffin liners.

3. Stir together the whole wheat flour, baking powder, baking soda and brown sugar then stir in oat-buttermilk mixture, applesauce and egg until well combined. Pour batter into prepared muffin cups and bake for 30 minutes or until a toothpick inserted into center of muffin comes out clean.

Apple Carrot Muffins

Ingredients
1 cup brown sugar
½ cup sugar
2½ cup all purpose flour
4 tsp baking soda
1 tsp baking powder
4 tsp ground cinnamon
2 tsp salt
2 cup carrots finely grated
2 large apples peeled, cored and shredded
1 egg
1¼ cup applesauce
¼ cup olive oil

1. Preheat oven to 375o F and grease or line 12 muffin cup with wrappers.

2. Combine brown sugar, sugar, flour, baking soda, baking powder, cinnamon and salt. Stir in carrot and apple and mix well. Whisk together egg applesauce and oil then stir into dry ingredients. Spoon batter into prepared pan and bake for 20 minutes. Let muffins cool in pan for 5 minutes before removing from pans to cool completely.

Makes 12 servings

Cranberry Nut Bread

Ingredients
2 cup all purpose flour
¾ cup sugar
¾ tsp salt
1 ½ tsp baking powder
½ tsp baking soda
1 cup chopped cranberries
½ cup chopped walnuts
1 egg
2 tbsp olive oil
¾ cup orange juice
1 tbsp orange zest

1. Preheat oven to 350o F and grease a loaf pan.

2. Combine the flour, sugar, salt, baking powder, and baking soda then add the cranberries and walnuts, and stir to coat with flour. Whisk together the egg, oil, orange juice, and orange zest. Pour the egg mixture into the flour mixture, and stir until just blended. Spoon the batter into the prepared pan and bake for 50 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes, then remove to a wire rack, and cool completely.

Makes 12 servings
