Pizza Dough And Artichoke Garlic Pizza

Ingredients
3 cup all purpose flour
1 .25oz. package active dry yeast
2 tbsp olive oil
1 tsp salt
1 tbsp sugar
1 cup warm water

1 unbaked pizza crust [see above]
¾ cup marinara sauce
1 6oz. jar marinated artichoke hearts drained liquid reserved
1 medium tomato sliced
2 cloves garlic minced
1lb. mozzarella cheese shredded

1. Preheat oven to 375o F.

2. Combine flour, salt, sugar, and yeast in a large bowl. Mix in oil and warm water. No need to wait for the dough to rise just pat it into the pan, add any desired toppings and bake for 20 to 25 minutes.

3. Pour the liquid from the artichokes into a small skillet, and bring to a boil over medium heat for 1 minute or until the liquid is almost gone then add garlic, and stir until you can just smell the garlic. Add artichoke hearts stir to coat with garlic flavor then remove from heat, and set aside. Spread marinara sauce over the pizza crust and sprinkle with cheese then top with the artichoke hearts, garlic and tomato slices over the cheese and bake as above or until crust is puffed and golden, and the cheese is melted.

Makes 1 pizza dough - 8 servings

Veggie Pizza With Potato Crust

Ingredients
4 potatoes shredded
1 medium onion shredded
2 eggs beaten
¼ cup all purpose flour
2 tbsp olive oil
1 zucchini thinly sliced
1 yellow squash thinly sliced
1 green bell pepper chopped
1 onion thinly sliced
2 cloves garlic minced
6oz. firm tofu crumbled
2 tomatoes sliced
2 tbsp chopped fresh basil
½ cup marinara sauce
1 cup shredded fat free mozzarella cheese

1. Preheat oven to 425o F and coat a 12 inch pizza or baking dish with nonstick cooking spray.

2. In a large bowl, combine the potatoes, shredded onion, eggs and flour. Mix well and press into the prepared pan and bake for 15 minutes, brush with olive oil and bake for 10 more minutes then place under broiler and broil for 3 minutes, until golden and crisp. Remove crust from oven but leave the oven on.

3. Combine the zucchini, yellow squash, green pepper, thinly sliced onion, garlic and tofu in a pan and saute until vegetables are just tender crisp. Combine the marinara sauce and basil and spread half of the sauce over the top to the potato crust. Add the sauteed vegetables and sliced tomatoes then pour the remaining sauce evenly over all topping with the cheese and bake for 7 minutes or until cheese is melted. Cut into pizza wedges and serve.

Butternut Squash Pizza

Ingredients
1 cup onion thinly sliced
½ butternut squash peeled seeded and thinly sliced
1 tsp chopped fresh rosemary
¼ tsp black pepper
3 tbsp olive oil divided
1 16oz. package refrigerated pizza crust dough
1 tbsp cornmeal
2 tbsp grated asiago cheese

1. Preheat oven to 400o F.

2. Place sliced onion and squash in a baking dish, sprinkle with rosemary, pepper, and 2 tbsp of the olive oil tossing to coat then bake for 20 minutes, or until onions are lightly browned and squash is tender, set aside. Increase oven temperature to 450o F. On a floured surface roll 2 balls of dough into an 8 inch rounds. Place the rounds on a baking sheet sprinkled with cornmeal, work in batches if necessary. Distribute squash mixture over the two rounds and bake for 10 minutes, checking occasionally, or until the crust is firm. Sprinkle with cheese and remaining tbsp olive oil, return to the oven just until cheese is melted.

Makes 4 servings
