Eggnog Pudding

Ingredients
1 5.1oz. package instant vanilla pudding mix
1 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground cloves
¼ tsp ground ginger
3 cup cold eggnog

1. Mix dry pudding mix in a bowl with cinnamon, nutmeg, cloves, and ginger until well blended. Whisk in milk until no lumps remain. Pour pudding into serving dishes and refrigerate until set.

Makes 6 servings

Holiday Cranberry Pudding

Ingredients
2 cup cranberries washed and drained
1½ cup all purpose flour
½ tsp salt
½ tsp baking soda
1/3 cup boiling water
½ cup molasses  
1 cup sugar
½ cup butter softened
½ cup heavy whipping cream
1 tsp vanilla extract

1. Lightly grease a 2 quart metal container. A one pound coffee can or similar size works well. A can is best so you can get the pudding out at the end.

2. Sift together the flour and salt and dredge cranberries in flour mixture. Dissolve baking soda into boiling water and add molasses then stir and allow to foam up. Add to the flour and cranberry mixture and mix until well blended. Spoon into a greased container then cover with a double layer of aluminum foil and fasten with kitchen twine. Place into a deep pot and fill with water up to about the half way mark on the pudding can. Cover pan and place over high heat. Bring water to boil, reduce heat and simmer for one hour. Remove from water and allow to cool. When ready to serve, invert can, open bottom of can and push through. Slice in ½ inch pieces. Mix together the sugar, butter and cream. Cook over medium heat until thick, stirring constantly. Add vanilla and pour over individual slices of pudding.

Makes 12 servings

Dried Fruit Bread Pudding

Ingredients
4 cups bread of your choice cut in 1 inch cubes
½ cup dried fruit of your choice diced
2 cups soy milk
3 eggs
1/3 cup sugar
½ tsp vanilla
½ tsp ground nutmeg
    
1. Preheat oven to 350oF.

2. Spray 9-inch glass pie plate with baking spray. Place bread cubes in plate and sprinkle with fruit.

3. In small bowl whisk together soy milk, eggs, sugar, vanilla and nutmeg with  until smooth. Pour over bread, press bread cubes into milk mixture and let stand a few minutes until bread is saturated. Bake uncovered 30 to 35 minutes or until golden brown and set.

Makes 8 servings
