Egg salad is a popular deli option for cold sandwiches, and this is a vegan twist on the classic. Created by the Kitchn, it’s recommended that you make this in advance as the flavors mature and intensify the longer it sits in the fridge. Featuring golden raisins, pumpkin seeds and spices, it’s great between bread, on top of greens, or scooped up with crackers.

Or the old standbys, tuna salad, egg salad, ham salad or lettuce salad. Made up in the cool (or relative cool) of the morning, and put in the refrigerator ready to go. Chop up a watermelon. That will rehydrate you.

I often use a slow cooker for my evening meals & lunch the following day it does not seem to heat up the house & I can make it go quicker by insulating the lid & then stays warmer for longer!
I shall try some of these cold meals!
