Great. Some of these don't really sound vegan possible, but I actually know how to make them totally vegan while preserving the tastes and textures completely.

"The Best Fall Casserole" really DOES look good. I copied and saved it to my recipe file with these modifications:

Use low sodium chicken broth
Increase the dried parsley to 1 tsp.(parsley has a very timid flavor to begin with)
Use Pork Italian sausage links(not vegan or vegetarian)
Use butter vs. Earth Balance
Made the Balsamic Vinegar as optional

Other than adjusting to my preference and experience, the vegetable, broth, and spice mixture are spot on.
