Squash is wonderfully versatile. Try using your favorite stuffing in an acorn squash half. There is one for quinoa here (very good); try subbing barley or farro for the quinoa for a different taste. Chunked squash subs nicely for sweet potatoes, yams or pumpkin in a number of dishes as well. You are limited only by your imagination.
