3-Ingredient Chocolate Truffles — Without Refined Sugar!

Quick and easy raw chocolate-hazelnut truffles are perfect for Valentine’s Day — or any day! There’s a misconception that raw food takes a lot of†time and special equipment to prepare, but these†truffles prove otherwise.

This delicious dessert†only takes about half an hour to make and contains no refined sugars. Instead, they get their sweetness from dates. And all that you need to make these truffles†is a regular blender or food processor.

Raw Chocolate-Hazelnut Truffles

This truffle recipe is for dark chocolate†fans. If you don’t like super dark chocolate,†use 3 tablespoons of cocoa powder instead of the full 1/4 cup.

Method

  1. Grind 1 cup of the hazelnuts in your blender until they have a flour-like consistency.
  2. Transfer the hazelnut flour to a mixing bowl, and whisk it together with the cocoa powder.
  3. Toss the dates and water in the blender, and blend on high until they start to form a paste. Transfer the date mixture to the bowl, and knead until you have a nice ball of dough.
  4. Grind the remaining hazelnuts until you have a coarse meal, and pour into a small bowl.
  5. Divide the hazelnut-chocolate dough into 10-12†balls, shaping each with the palms of your hands. Roll each ball in the hazelnut meal that you made, and chill until youíre ready to serve. These†taste best if they can sit for a few hours or overnight in the fridge, but you can serve immediately, if you want!

Hazelnuts and chocolate--yum! I make something similar, but don't roll the dough into balls, just eat with a spoon. Less messy to make, just as tasty.
