Super Summer Healing Juice
Let’s face it: everyone overdoes it at some point during the summer. Whether it’s too much sun or excessive physical activity, this juice is refreshing and helps to take down inflammation quickly. Its’ anti-inflammatory properties are thanks to the enzyme bromelain in the pineapple (only fresh or frozen, canned pineapple has no enzymes left) and the gingerols in ginger. Extensive research shows that the compounds in ginger are more potent than many anti-inflammatory drugs.
1/2 pineapple, outer skin and core removed
1 1-inch piece of ginger
Pass all ingredients through a juicer or blend in a high powered blender with enough cold water to suit your preference. Serve over ice and drink immediately.
Minty Melon Refresher
This icy drink is perfect on a hot summer day when you need refreshment. It’s cooling, calming, and oh so delicious. The sweet watermelon with the mint leaves is a fantastic flavor combination.
2 cups seeded and coarsely chopped watermelon (honeydew melon also works well)
10 ice cubes
4 mint leaves
In a blender, combine the watermelon, ice cubes, and mint. Blend until smooth. Serve immediately.
