7. Wonton Nachos
1 Pack wonton wrappers, cut in half diagonally
Canola oil for frying
2+ Cups grated jack and/or cheddar
Any of the following:
Fresh cilantro, chopped
Green onion, diced
Radishes, sliced thinly
Sour cream, thinned slightly with water
Deep fryer (if you don’t have either, you can use a large, heavy-bottomed saucepan)
Deep fry thermometer
1. Fry wonton wrappers. In your wok, or saucepan, heat oil until the temperature reaches 350 degrees. Work with them a few at a time, and fry until golden brown. Place on a paper towel-lined plate.
2. Preheat oven to 350 degrees. Coat a baking sheet with a nonstick spray. Place wonton chips in even layers of chips, toppings and cheese.
3. Bake for about 15-20 minutes, or until the cheese has melted. Serve immediately.
