Barbecue Tofu and Vidalia Onion Stir-Fry

Adapted from The Vegetarian 5-Ingredient Gourmet, by Nava Atlas (Broadway Books, 2001).

A little store-bought barbecue sauce transforms tofu from blah to bliss. Paired with sweet Vidalia onions (or red ones, if Vidalias aren’t available), and you have a protein-packed, low fat (only 9 grams!), absolutely no-cholesterol tasty meal.

You can serve this over rice, or on its own with a salad and side. Healthy, nutritious, and completely mouth-watering.

INGREDIENTS
1 1/2 tablespoons light olive oil
2 large Vidalia or red onions, quartered and thinly sliced
1 pound firm or extra-firm tofu, well-drained and diced
1/2 cup natural barbecue sauce, or as needed

1. Heat the oil in a stir-fry pan or large skillet. Add the onions and saute over medium heat until lightly golden.

2. Add the tofu and barbecue sauce and turn the heat up to medium-high. Stir-fry for 6 to 8 minutes, and serve on its own or over hot cooked rice.

Serves 4.
