Bean, Avocado and Tomato Salad

Itís getting warmer outside, so it’s a great time for salad meals. This refreshing salad has three types of beans and a light, wonderful dressing. Itís delish!


Ĺ head red leaf lettuce, washed and torn
Ĺ head romaine lettuce, washed and torn
1 avocado, cubed
Ĺ tomato, cubed
Ĺ small red onion, thinly sliced in half moons
1 cup pinto beans, canned or homemade
1 cup black beans, canned or homemade
1 cup black-eyed peas, canned or homemade


ĺ cup olive oil
2 tablespoons lemon juice
1 tablespoon Spike Seasoning*
Dash granulated onion

  • Drain and rinse beans.
  • Wash and tear lettuce and place in large bowl.
  • Layer beans on top of lettuce.
  • Top with remaining ingredients.
  • Toss with dressing and serve.

Serves: 4-6

Total cooking time: 15 minutes

So, noted now, Mary T., sometimes I buy tomatos from the Netherlands, they raise them in planthouses, and if you don´t buy them too often I think that´s okay, rather than buying some from Africa or so because I´m from Germany, so the Netherlands ain´t sooo far... .

Great idea, but since we don´t get those kinds of bean as canned beans here I´d use kidney beans, I can imagine they´d be just as tasty in this salad!!! Thank you, will just note the recipe because I buy and eat avocados more often... Not the expensive Hass avocados, I choose the cheaper ones, they´re just as tasty and healthy!!!
