Bean, Avocado and Tomato Salad

Its getting warmer outside, so it’s a great time for salad meals. This refreshing salad has three types of beans and a light, wonderful dressing. Its delish!


head red leaf lettuce, washed and torn
head romaine lettuce, washed and torn
1 avocado, cubed
tomato, cubed
small red onion, thinly sliced in half moons
1 cup pinto beans, canned or homemade
1 cup black beans, canned or homemade
1 cup black-eyed peas, canned or homemade


cup olive oil
2 tablespoons lemon juice
1 tablespoon Spike Seasoning*
Dash granulated onion

  • Drain and rinse beans.
  • Wash and tear lettuce and place in large bowl.
  • Layer beans on top of lettuce.
  • Top with remaining ingredients.
  • Toss with dressing and serve.

Serves: 4-6

Total cooking time: 15 minutes
