Bean, Avocado and Tomato Salad
It’s getting warmer outside, so it’s a great time for salad meals. This refreshing salad has three types of beans and a light, wonderful dressing. It’s delish!
½ head red leaf lettuce, washed and torn
½ head romaine lettuce, washed and torn
1 avocado, cubed
½ tomato, cubed
½ small red onion, thinly sliced in half moons
1 cup pinto beans, canned or homemade
1 cup black beans, canned or homemade
1 cup black-eyed peas, canned or homemade
¾ cup olive oil
2 tablespoons lemon juice
1 tablespoon Spike Seasoning*
Dash granulated onion
- Drain and rinse beans.
- Wash and tear lettuce and place in large bowl.
- Layer beans on top of lettuce.
- Top with remaining ingredients.
- Toss with dressing and serve.
Total cooking time: 15 minutes
