Chili-Lime Kale Salad

This flavorful kale salad recipe is a delicious side dish. It’s also perfect stuffed into a taco or a burrito instead of your usual lettuce or spinach.

Ingredients

  • Chili-Lime Kale Salad
  • Yield: 2-4 servings; Prep Time: 10 minutes
  • Ingredients
  • 2 packed cups chopped kale
  • juice of 1 fresh lime
  • 1 chopped green onion
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1 teaspoon olive oil
  • 1 cup shredded carrots

Instructions

  1. In a large bowl, combine the kale, lime juice, green onion, chili powder, cumin, garlic powder, and olive oil. With clean hands, massage the kale until it turns a beautiful bright green and begins to wilt.
  2. Stir in the carrots.
  3. Serve as a side dish or use to stuff tacos or burritos.
