Vegan chef and winner of Food Network’s Cupcake Wars Chloe Coscarelli is releasing her first-ever cookbook titled Chloe’s Kitchen, in which she shares some delectable and surprising vegan dishes. Releasing March 6, Chloe’s Kitchen showcases 125 different recipes that are easy and delicious. This book is designed for those who are living a vegan lifestyle, those who want to incorporate vegan meals into their diet, and those who may be contemplating becoming vegan. There is a forward by Dr. Neal Barnard that discusses how eating a vegan diet can aid in weight loss, reduce cholesterol and fight diseases including diabetes and cancer.

Chloe has been a vegan since 2005 and thrives on squashing the myth that vegan food is bland and full of sprouts. In fact, her recipes are tasty, easy to follow and can be made with ingredients you can find at any supermarket. Some of the recipes you will find in Chloe’s Kitchen include creamy spaghetti carbonara, macaroni and “cheese”, hearty stroganoff with mushrooms, country meatloaf, and polenta cutlets. There are recipes for every meal and the book features Chloe’s award winning Cupcake Wars recipe for the first time ever.

Within this cookbook you will find delicious vegan recipes that contain no meat, diary, eggs, soy or gluten. Chloe’s many accomplishments and her background as a vegan chef make Chloe’s Kitchen an attractive cookbook for anyone wanting to expand their vegan palate, or those who want to experiment with some great vegan foods. Chloe graduated from the Natural Gourmet Institute of Health and Culinary Arts in New York City. She also completed the Cornell University Plant-Based Nutrition Program.

It wasn't hard for me to become a vegetarian, but I haven't yet gotten the hang of what you make when you can't use even a few animal products. I really need a cookbook to teach me the basics! Chloe Coscarelli's cookbook sounds like it has lots of easy, yummy recipes that would help me see the possibilities.

I so enjoy the Vegan recipes , my daughter -in-law is a vegan and it helps me out when I go to make something and I think it is a good thing. Pluse I am eating more and more like that.

While I am an meat eater and make no apologies I like to use vegan recipes also and enjoy the variety that many foods have to offer. Not every meat eater requires meat every day of the week and I have veggie cookbooks as well!

Victor M. - Tell me, why shouldn't Care2 make vegan posts anymore? This site is for both omnivores and vegetarians/vegans and Care2 makes posts for both of them. Guess what? This is a big world and everyone has their own views and beliefs and not everyone is going to agree with everyone else (I know, it's pretty shocking). If someone out there doesn't share the same beliefs that you have? Then that's okay, it's really not a big deal at all. And if that's not okay with you, then you need to get over yourself.
